6 ounces bulk Italian sausage
10 taco shells
3 cups shredded mozzarella cheese, divided
3 ounces sliced pepperoni, chopped
⅓ cup minced onion
⅓ cup diced green bell pepper
1 (6 ounce) can sliced black olives
½ cup pizza sauce
⅓ cup grated Parmesan cheese
½ teaspoon dried oregano
1 pinch red pepper flakes
1 sprig fresh oregano, leaves picked from stem

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir Italian sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.

vegetable oil for frying
3 c mexican meat mix, thawed
12 - 15 corn tortillas
2 c grated cheddar cheese
shredded lettuce
2 tomatoes, fresh and chopped
1/4 c chopped green onion
1 can(s) (7 oz) green chili salsa

Steps:

  • 1. Heat 2 inches of oil to 375F degrees in a large skillet. Heat 'Mexican Meat Mix' in a medium saucepan. Fry tortillas in hot oil. Using tongs, fold tortillas in half, then immediately open to 45-degree angle. Fry about 1 minute, until crisp. Drain on paper towels. Place 2 Tablespoons 'Mexican Meat Mix' in each cooked tortilla. Top with grated cheese, lettuce, tomatoes, green onion and green chili salsa.
  • 2. Variation: For convenience, us prefried, formed corn tortillas instead of forming your own.
