Ground turkey makes this meatloaf lighter and healthier; cheese and taco seaoning make it delicious. From betterrecipes.com. Again altered even further for calorie and fat content. You might not be able to find whole wheat bread crumbs. I usually de-crust 1-2 slices of whole wheat bread and dry in the oven and then crumble. The last two ingerdients are for the topping. Easily halved or even cut into thirds.

1 (1 3/4 ounce) package taco seasoning
1/2 teaspoon ground pepper
1 egg white
1 whole egg
1 onion, chopped
2 garlic cloves, minced
1/4 cup tomato sauce
1/4 cup whole wheat bread crumbs
1/2 cup 2% shredded cheddar cheese
1 cup cooked brown rice
3 lbs ground turkey
1 cup tomato sauce
1/2 cup 2% shredded cheddar cheese

Steps:

  • Mix together eggs, taco seasoning, black pepper, onion, garlic, tomato sauce, brown rice, bread crumbs and cheese.
  • Add turkey and mix until thoroughly combined.
  • Grease sheet pan with Pam
  • Form two loaves of meat mixture on pan.
  • Top each loaf with tomato sauce and cheese.
  • Bake at 375 degrees for 1 1/4 hour or until meat thermometer registers 165 degrees.
  • Let rest for 5 minutes before slicing.

1 lb raw extra-lean ground turkey
2 slice fat-free cheddar cheese
1/2 c shredded fat-free cheddar cheese
1/2 c canned sweet corn kernels
1/4 c chopped green bell peppers
1/4 c chopped onions
1/2 c salsa
1/2 pkg taco seasoning mix, (dry)

Steps:

  • 1. Preheat oven to 375 Cook peppers and onions for 3 minutes over medium heat in a pan sprayed with nonstick spray. In a large bowl, combine onions and peppers with turkey, corn and seasoning mix. Spread half of the mixture evenly into the bottom of a loaf pan (about 9" x 5" sprayed with nonstick spray. Layer the two slices of fat-free cheese on top of the mixture ( try to keep slices away from the pan's edges). Evenly top with the remaining meat mixture. Poor the salsa over the top of the loaf. Cook in the oven for 30 minutes. Top loaf with shredded cheese. Return loaf to the oven and cook for another 15 minutes. per serving (1/6 of loaf) calories 127 fat 1g sodium 688mg carbs 7g fiber 0,5g
