1 16 oz bag frozen french fries
2 lb lean ground beef
1 1/2 c water
2 packets ortega taco seasoning mix
1 c ortega salsa
1 15 oz can joan of arc black beans, drained
1 6 oz can sliced black olives, drained
1 4 oz can ortega diced green chiles
2 c shredded cheddar cheese
1 c sour cream

Steps:

  • 1. Follow package directions for baking fries. Set aside.
  • 2. Brown ground beef in medium skillet over medium-high heat. Stir in water and seasoning mix. Cook for 5 minutes. Remove from heat.
  • 3. Spoon salsa, beans, olives, chiles, cheese and sour cream, into separate bowls. Place fries in large bowl near meat mixture and toppings. Using heat-resistant ceramic plates, allow guests to create their own chili fries with meat and toppings.
  • 4. Place ceramic plate under broiler about 4 minutes or until fries reheat and cheese melts. Top with sour cream. Serve immediately.

1 can (15 ounces) black beans
1 can (16 ounces) kidney beans
1 can (15 ounces) pinto beans
1 can (14 ounces) hominy
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 can (8 ounces) tomato sauce
1 small onion, chopped
1 envelope ranch salad dressing mix
1 envelope taco seasoning
1/2 teaspoon pepper
1 can (4 ounces) chopped green chiles
2 cans (14-1/2 ounces each) diced tomatoes, undrained
Optional toppings: corn chips, sour cream and shredded cheddar cheese

Steps:

  • In a large skillet, cook and crumble beef over medium-high heat until no longer pink, 8-10 minutes. Using a slotted spoon, transfer beef to a 5-qt. slow cooker., Rinse and drain beans and hominy. Add to beef, along with canned tomatoes and green chilies, tomato sauce, onion, the dressing and seasoning mixes and pepper. Puree green chilies and remaining diced tomatoes in a covered blender until smooth; stir into beef mixture., Cook, covered, on low until flavors are blended, 6-8 hours. 1 medium carrot, finely chopped
2 pounds beef stew meat (cut into 1/2-inch pieces)
3 tablespoons all-purpose flour, divided
2 tablespoons canola oil
1 can (14-1/2 ounces) Mexican diced tomatoes
1 envelope (1.25 ounces) chili seasoning mix
1 can (15 ounces) pinto beans, rinsed and drained
1 medium green pepper, chopped
1 jalapeno pepper, seeded and finely chopped
2 packages (32 ounces each) frozen french-fried potatoes
2 cups shredded sharp cheddar cheese
Optional toppings: Sour cream and sliced jalapeno peppers

One 22-ounce bag frozen waffle fries
1 1/2 teaspoons vegetable oil
8 ounces ground beef (85% lean)
1 tablespoon taco seasoning (about half of a 1-ounce package)
1 cup shredded Cheddar
1 cup shredded iceberg lettuce
1/2 cup drained pinto beans
1/4 cup pickled jalapenos
1/4 cup sliced black olives
2 Roma tomatoes, seeded and chopped
1 small avocado, chopped
Sour cream, for serving
1/2 cup mayonnaise
2 tablespoons yellow mustard
2 tablespoons hot sauce, such as sriracha

Steps:

  • For the taco fries: Preheat the oven to 450 degrees F.
  • Spread the waffle fries out on a large rimmed baking sheet and bake, stirring once, until golden brown and crisp, about 25 minutes.

6 potatoes, baking
1 cup green chili sauce
1 cup cheddar cheese, grated

Steps:

  • Peel and cut potatoes into french fry sticks.
  • Either fry potatoes in oil or bake in a 400 oven for 15 to 20 minutes.
  • Heat green chili in a saucepan.
  • When potatoes are done place on a broil proof pan, I use a metal pie pan, pour green chili on top then sprinkle with cheese.
  • Place back into a broiler for 5 minutes to melt cheese.
