Steps:

  • Gather ingredients and heat oven to 350°F. Line large cookie sheet with cooking parchment paper.
  • In medium bowl, mix chicken, chiles and 1 teaspoon of the taco seasoning mix.
  • Unroll 1 can dough. Press into rectangle filling most of the space on cookie sheet. Spread chicken mixture evenly on dough. Top evenly with cheese.
  • Unroll second can of dough. Place on top, pressing edges firmly to seal.

If you like hot, use hot taco seasoning or add hot sauce at the table. Add a salad and a nice piece of cornbread and dinner is served.

2 lbs chicken thighs, bone-in
14 ounces chicken broth, canned (or homemade)
10 ounces beer
2 stalks celery, sliced
1 onion, medium, diced
15 ounces black beans, canned, drained and rinsed

15 ounces diced tomatoes, canned
1 ounce taco seasoning mix, 1 pkg
8 ounces fat free cream cheese, cubed

Steps:

  • Remove skin and visible fat from chicken thighs. Place in crock pot with broth, beer, celery and onion.
  • Cook on high 2 hours or till chicken is done. Remove chicken from crock-pot and allow to cool. Remove bones from chicken thighs and chop meat to desired size. Add diced chicken back to broth in crock-pot. This step can be done ahead of time and refrigerated overnight. Then in the morning, skim off fat collected on top and allow crock to sit for 30 mins at room temp before turning on and adding other ingredients.
  • Add beans, tomatoes, and taco seasoning package. Return crock-pot to low for up to 8 hours or high for as little as two hours.
  • 30 mins before serving add cream cheese to crock-pot and put on high. Stir well before serving, breaking up large pieces with back of spoon. If you are adding rice, do so now and allow to heat thru for a few minutes.
  • Top with crushed chips and cheese.

1 lb ground beef (or chicken- see note below)
1/2 onion chopped fine
1 can(s) corn
1 can(s) chili beans
1 can(s) chopped green chilis (i use the big can)
1 can(s) pinto beans
1 can(s) chopped tomatoes (or rotel)
1 can(s) black beans
1 pkg taco seasoning
1/2 to 1 tsp each cumin, chili powder, paprika and corriander- add the amount you desire.
6 c water or chicken stock (see note at the bottom)
TOPPINGS
cilantro, fresh
jalapenos, fresh
cheddar cheese, shredded
sour cream
tortilla chips

Steps:

  • 1. In a stock pot or large pan, brown ground beef and onion. Drain the fat.
  • 2. Add corn, chili beans, green chilies, & chopped tomatoes (I don't drain any of these). Add the rinsed black beans & pinto beans, taco seasoning & water.
  • 3. Add all the dry seasonings.
  • 4. Let simmer for at least an hour. (This is better the longer it simmers or if made the night before.)
  • 5. Serve over tortilla chips with cilantro, jalapenos, cheddar cheese and sour cream to garnish.
  • 6. You can also make this with chicken. Boil 2 thighs & 2 drumsticks or two large breasts.
  • 7. Let cool & remove the meat. Strain the fat out of the cooking water (which is now chicken stock) and add more water to make the 6 cups if needed.
  • 8. If you like spicy, add more cumin or chili powder while the soup simmers. Freezes well
