1 yellow onion (, diced)
2 cups salsa
3 tablespoons taco seasoning (, or one packet)
1/2 cup water
2 cans refried beans
2 cups cheddar cheese (, shredded)
2 cups Fritos chips
1 cup romaine lettuce (, thinly sliced)
1 vine tomatoes (, diced)
1/2 cup black olives (, sliced)

Steps:

  • Preheat oven to 350 degrees and spray a 9x13 baking dish with vegetable oil spray.
  • Add the ground beef and onions to a large skillet on medium high heat and break it apart as you cook it, for 6-8 minutes, until no longer pink.
  • Drain excess fat before adding in taco seasoning and water.
  • Stir well and cook until water has evaporated then add in the salsa and stir.

1 can(s) seasoned diced tomatoes
1 can(s) whole kernel corn drained and rinsed
2 pkg taco seasoning mix
1 can(s) tomatoe soup/tomatoe sauce
2 c grated cheeder cheese
1/3 pkg totilla chips (this is a good time to use up the not so fresh ones, bottom of the bag)
2 lb browned ground beef
1/2 c onions chopped (optional )
1/3 c peppers sweet or hot (optional)

Steps:

  • 1. Brown your meat, and then add onions and peppers, taco seasoning, and required amount of water. Usually a cup per package of seasoning, and 1 package to a lb of beef.
  • 2. Let this simmer for about 10 mins to reduce and let the meat soak up flavor.
  • 3. Add your diced tomatoes, tomato soup/sauce, corn, and tortilla chips. Let this heat through.
  • 4. Dump into a sprayed oil casserole dish, and top with cheese. Bake for about 20 min. on 350, or until cheese is melted, and slightly browned.
  • 5. This can be served on top of fresh tortilla chips, with lettuce as a taco salad, or as is with maybe some chips on the side. Olives and sour creme really add to this dish as well. Mix up the toppings to make your own custom version of taco casserole. Enjoy!
