I originally found this taco casserole recipe in a Taste of Home magazine. Since then, I have made this recipe at least 50 times. I love it because the ingredients list isn't complicated and, based on the layers, I can readily remember all ingredients when I am at the store without my recipe card. I have served this for myself and had wonderful leftovers or many times I have made it for company with a nice green salad to accompany it. I hope you enjoy it as much as I do.

1 lb ground beef
1 (1 1/4 ounce) package taco seasoning
1 (15 ounce) can refried beans
2 cups monterey jack cheese, divided (or mixed cheddar, jack etc.)
1 cup salsa (I prefer mild, but if you would like to kick it up a notch, go for it)
2 green onions, chopped
1 (2 1/3 ounce) can sliced black olives
1 tomatoes, chopped
2 cups corn chips (coarsely crushed or chopped)

Steps:

  • Brown ground beef and drain.
  • Add taco seasoning and cook according to package directions, adding proper amount of water.
  • Put corn chips on bottom of 8x8" dish.
  • Cook refried beans on stove until hot.
  • Add 1 cup cheese and 1 cup salsa. Stir until combined.
  • Pour beans over corn chips in dish.
  • Add beef to top of beans.

6 ounces dry extra-wide egg noodles, uncooked
1 pound ground chuck beef (80% lean)
2 cups frozen Southwest mixed vegetables (corn, black beans, red peppers)
1 (10 ounce) can Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
1 (10 ounce) can red enchilada sauce
1 ¼ cups water
1 ¼ cups shredded Mexican blend cheese
¼ cup thinly sliced green onions
1 teaspoon Sour cream

Steps:

  • Preheat oven to 400 degrees F. Spray 13x9-inch glass baking dish with cooking spray. Place uncooked noodles in baking dish.
  • Heat large skillet over medium-high heat. Add beef; cook 5 to 7 minutes or until crumbled and no longer pink. Drain. Add vegetables, undrained tomatoes, enchilada sauce and water to skillet; stir. Bring to a boil. Pour mixture over noodles.
  • Cover dish tightly with foil; bake 15 minutes. Stir; sprinkle with cheese and cover with foil. Bake 10 minutes more or until noodles are tender. Sprinkle with green onions. Serve with sour cream, if desired.

This is a great Mexican dish for our bigger family. Could be made ahead for potlucks too! This recipe I threw together with what I had on had one night that sounded good together! Could be done with chicken as alternative too. I served this with cooked spinach and put my portion of casserole over the spinach.

2 pounds ground beef
½ cup diced onion
1 ½ cups water
9 tablespoons taco seasoning mix
5 flour tortillas
1 (10 ounce) can whole kernel corn, drained
2 cups shredded Cheddar cheese
8 corn tortilla chips, or more to taste
¼ cup diced tomatoes, or to taste
2 tablespoons chopped olives, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until almost browned and crumbly, about 5 minutes. Add onion; cook and stir until beef is browned and onion is softened, about 5 minutes more. Mix water and taco seasoning into beef mixture; simmer until water evaporates, about 5 minutes.
  • Line the prepared baking dish with tortillas and top with 1/2 of the ground beef mixture. Spoon 1/2 of the corn over the beef layer and top with 1/3 of the Cheddar cheese. Crush tortilla chips over cheese layer. Repeat layers with remaining ingredients, ending with Cheddar cheese, tomatoes, and olives.
  • Bake in the preheated oven until heated through and cheese is melted, 15 to 20 minutes.

This is a casserole I came up with when I worked in a group home where I had to cook dinner for 6 grown men. Please note: some of these are estimates as I honestly don't know the exact size on some of these containers for Zaar's computer. Use whatever you can find in your store (12, 8, 16 ounce)

1 lb ground beef or 1 lb turkey
1 (3 ounce) packet taco seasoning
1 (12 ounce) jar salsa
1 lb pasta, whatever shapes you have on hand (Elbows, Wagon Wheels, Penne)
2 cups shredded cheddar cheese, divided
8 ounces sour cream (optional)
16 ounces sliced black olives (optional)
1 head lettuce

Steps:

  • Preheat oven to 350 degrees.
  • Cook Pasta until done.
  • While pasta is cooking brown the ground beef.
  • Drain ground beef and add taco seasoning per packet directions.
  • Drain Pasta and put into large mixing bowl.
  • Fold in Salsa, 1/2 the Cheese, and Ground Meat.
  • Put into 13X9 casserole dish.
  • Top with remaining Cheese.
  • Bake for 30 minutes until warmed through - Cheese should be melted and bubbly.
  • Top with Sour Cream, Shredded Lettuce, Sliced Black Olives etc. Whatever you use to top your tacos!

1 (16 ounce) can refried beans (or homemade refried beans)
1 (16 ounce) jar salsa
1 (1 ounce) package Old El Paso taco seasoning mix
2 1/2 cups coarsely broken corn tortilla chips (divided)
1 medium green bell pepper (diced)
4 green onions (sliced)
3 tomatoes (diced and divided)
1 cup shredded cheddar cheese (or favorite cheese)
1/4 cup sliced black olives

Steps:

  • Heat oven to 350 degrees.
  • In a large skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain grease. Stir in refried beans, salsa, and taco seasoning mix.
  • Reduce heat to medium. Heat to boiling, stirring occasionally.
  • In ungreased 2-quart casserole, place 2 cups of the broken tortilla chips.
  • Top evenly with beef mixture. Sprinkle with bell pepper, onions, 1 cup diced tomato, the cheese, and olives.
  • Bake uncovered 20 to 30 minutes or until hot and bubbly and cheese is melted.
  • Top baked casserole with remaining 1/2 cup diced tomato, sliced olives, and remaining 1/2 cup tortilla chips.
