16 to 18 ounces refrigerated or frozen cheese tortellini
1 medium sweet red pepper, julienned
1 medium green pepper, julienned
3/4 cup sliced red onion
1/4 cup sliced ripe olives
1/2 cup olive oil
1/2 cup white wine vinegar
3 tablespoons minced fresh mint or 1 tablespoon dried mint flakes
3 tablespoons lemon juice
1-1/2 teaspoons seasoned salt
1 teaspoon garlic powder
1/2 teaspoon pepper
1/8 to 1/4 teaspoon crushed red pepper flakes
1/2 cup crumbled feta cheese

Steps:

  • Cook tortellini according to package directions; drain and rinse in cold water. In a large bowl, combine the tortellini, peppers, onion and olives. , In a jar with a tight-fitting lid, combine the oil, vinegar, mint, lemon juice, seasoned salt, garlic powder, pepper and pepper flakes; shake well. 2/3 cup diced cucumbers

1/2 cup red wine vinegar
2 teaspoons minced garlic

1 (250 g) bottle Kraft sun-dried tomato salad dressing
1 cup long English cucumber, sliced

1/2 pound smoked turkey wings or neck
1 1/2 pounds collard greens
2 tablespoons vegetable oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon sugar
1/2 teaspoon crushed red pepper flakes

Steps:

  • In a 4-quart saucepan, bring the water and smoked turkey to a boil over high heat. Reduce the heat and simmer, covered, for 1 hour.
  • While the turkey is cooking, wipe the collards with a damp towel, then wash 2 or 3 times or until all the dirt and grit has been removed. Chop the greens into 1/4-inch pieces; you will have 10 cups of chopped greens.

½ cup extra virgin olive oil
¼ cup lemon juice
¼ cup red wine vinegar
2 tablespoons chopped fresh parsley

1 pound baby spinach leaves
1 cup crumbled feta cheese
½ cup slivered red onion
