Time 4h30m

Yield 8 serving(s)

Number Of Ingredients 7

2 1/2 lbs cube steaks
1 1/2 teaspoons salt
1 1/2 teaspoons black pepper
2 (28 ounce) cans crushed tomatoes
2 bell peppers, sliced
2 onions, medium-sliced
2 celery ribs, diced

Steps:

  • Pour 1 cup of crushed tomatoes into bottom of the crock pot.
  • Add 1 TBS celery, 1/4 of an onion, 1/4 of a bell pepper.
  • Cut the cube steaks into 8 pieces.
  • Sprinkle the salt and pepper over the cube steak.
  • Place the cube steak in the crock pot.
  • Add the onions and then the bell peppers on top of the meat.
  • Pour the remaining crushed tomatoes over the top of the mixture.
  • DO NOT STIR.
  • Turn the crock pot on high for 6 hours.
  • When the tomatoes, peppers, and onions have cooked down it should be done.
  • Gently serve several meat portions to each person.
  • Serve it on rice.
  • Then spoon some of the sauce over the rice and meat.

Tips:

  • Choose the right cut of beef. The best cuts for Swiss steak are chuck roast, top round, or bottom round. These cuts are tough but flavorful, and they become tender when braised in liquid.
  • Brown the beef before braising it. Browning the beef adds flavor and helps to seal in the juices. To brown the beef, heat a large skillet over medium-high heat. Add the beef and cook for 5-7 minutes per side, or until browned on all sides.
  • Use a flavorful braising liquid. The braising liquid is what gives Swiss steak its flavor, so it's important to use a liquid that is flavorful and aromatic. Some good options include beef broth, red wine, tomato juice, or a combination of these liquids.
  • Add vegetables to the braising liquid. Vegetables add flavor and nutrition to Swiss steak. Some good options include onions, carrots, celery, and mushrooms.
  • Cook the Swiss steak until it is tender. Swiss steak should be cooked until it is fall-apart tender. This can take anywhere from 1 to 3 hours, depending on the cut of beef and the cooking method.

Conclusion:

Swiss steak is a classic comfort food that is easy to make and always a crowd-pleaser. By following these tips, you can make the best Swiss steak that your family and friends will love.
