Tips:

  • For the best results, use high-quality beef steak that is at least 1 inch thick.
  • If you don't have a meat mallet, you can use a rolling pin or the bottom of a heavy saucepan to pound the steak.
  • Be sure to dredge the steak in flour before browning it. This will help to thicken the gravy.
  • Don't overcrowd the pan when browning the steak. If you do, the steak will not brown evenly.
  • Cook the steak over medium-high heat until it is browned on both sides. Do not overcook the steak, or it will become tough.
  • After browning the steak, remove it from the pan and set it aside. Then, add the onions and mushrooms to the pan and cook until they are softened.
  • Add the beef broth, sour cream, and mustard to the pan. Bring the mixture to a simmer and cook for 10 minutes, or until the gravy has thickened.
  • Return the steak to the pan and cook for an additional 5 minutes, or until the steak is heated through.
  • Serve the steak with mashed potatoes, egg noodles, or rice.
