KAREN'S SWISS STEAK (STOVE TOP, CROCK POT OR OVEN)
This recipe can be prepared on the stove top, or in the oven or crock pot. I decided to post it since it is a bit different than the swiss steak recipes I have seen on here. Just wait until you smell this stuff cooking!

Steps:
- Cut meat into 6 serving pieces.
- Combine flour, salt, mustard, pepper, and garlic powder.
- Put 2 T. of the flour mixture into the meat.
- Brown the meat in the shortening on both sides.
- Drain off excess fat.
- Add undrained tomatoes, onion, celery, carrots, Worcestershire sauce and cooking wine.
- Cover and simmer for 1 1/4 hours or until meat is tender.
- Remove meat to a serving platter and keep warm.
- Combine 1/4 water and the remaining flour mixture.
- Stir into tomato mixture until thick and bubbly.
- Pass with meat.
- Serve meat and sauce with hot cooked noodles or rice.
- Crock pot directions:.
- Prepare swiss steak as above except cut meat to fit your crock pot.
- After browning meat, transfer to crock pot.
- Stir remaining flour into pan drippings in the skillet.
- Stir in the remaining ingredients and cook until thick and bubbly.
- Pour over meat in the crock pot.
- Cook on low for 8 to 10 hours.
- Serve with hot cooked noodles or rice.
- Oven directions:.
- Place meat in a baking dish.
- Cover with thickened drippings and veggies as above.
- Bake, uncovered, in a 350 degree oven for 1 hour and 20 minutes.
- Serve with hot noodles or rice.

- 1. 8 am. dice up the onion and celery, place in crock pot. Pour in can of tomatoes, including juice.
- 2. whisk together beef broth and 5 tbs of flour. add to mixture in crock pot. add salt and pepper to taste, stir.
- 3. trim any fat off steak and cut into app 3 ounce serving size pieces. salt and pepper, then dredge in flour and flash brown steaks in canola oil. They do not have to be cooked all the way done, we are just browning the outsides!

- 1. Mix soup, garlic, chopped peppers, water, liquid smoke together in med. size bowl and set aside.
- 2. Cut beef into serving sizes, cut all gristle and tendons out of the meat.
- 3. Dredge beef steaks in flour and fry in vegetable oil till golden brown. Set aside.
- 4. Slice onion thin.
- 5. I used a crock pot liner for this, sure saves a lot of cleanup later. Pour some sauce in bottom of pot, follow with some steak, add onions on top of steak, then a generous covering of the soup mixture. Continue layering till ingredients are gone.
- 6. Cook on high for 5 hours, then add the quartered potatoes and turn on low for another 2 1/2 hours. Push the potatoes down so they are all covered, you may have to add a little water if sauce becomes too thick. Hope you enjoy this as much as I do.
- 7. The sauce makes a wonderful gravy over the potatoes.
