2 tablespoons onion, chopped
4 slices caraway-dill cocktail rye bread, cubed (2 cups)
1/2 cup shredded fat-free Swiss cheese (2 ounces)
1/3 cup diced smoked chicken or turkey, if desired
1/2 cup fat-free cholesterol-free egg product or 3 egg whites
3/4 cup low-fat milk
1/8 teaspoon pepper

Steps:

  • Spray two 10-ounce oval or round individual casseroles with cooking spray. Heat oil in 10-inch nonstick skillet over medium-high heat. Cook onion in oil about 2 minutes, stirring occasionally, until tender.
  • Mix onion, bread, cheese and chicken; spoon into casseroles. Beat remaining ingredients with hand beater until blended; pour over bread mixture. Cover and refrigerate at least 2 hours but no longer than 24 hours.
  • Heat oven to 325°F. Bake uncovered 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving.

1 cup sauerkraut, rinsed, drained and patted dry
1/4 cup chopped dill pickles
6 large eggs
2 cups 2% milk
2/3 cup Thousand Island salad dressing
Dash garlic powder
1/4 cup shredded Parmesan cheese
Chopped fresh parsley

Steps:

  • Place bread cubes in a greased 13x9-in. baking dish. Top with corned beef, Gruyere, sauerkraut and pickles. In a large bowl, whisk eggs, milk, dressing and garlic powder. Pour over bread. 12 ounces rye bread (about 5 cups) or 12 ounces pumpernickel bread, cut into 1-inch cubes (about 5 cups)
1/2 cup ham, chopped
1 teaspoon olive oil (optional)
1/2 small onion, minced
3 garlic cloves, roughly chopped
1 lb mushroom, sliced
3 cups milk
6 eggs, beaten slightly
1 teaspoon dried thyme
1/2 teaspoon fresh ground black pepper
1/4 teaspoon salt
6 ounces shredded swiss cheese, divided (about 1-1/2 cups)

Steps:

  • Preheat oven to 400 degrees. Spread bread cubes in a single layer on a baking sheet; bake 20 minutes, till slightly dried.
  • While bread is baking, heat a large skillet over medium heat. Add ham and saute a few minutes. Add oil (if desired) and stir in onion, garlic, and mushrooms. Saute till onion and garlic are golden and soft and mushrooms have released their liquid. Remove from heat and set aside.
  • Whisk together milk, egg, thyme, pepper, and salt.
  • To assemble the strata, layer half the bread cubes in the bottom of a lightly greased 9 by 13 inch glass baking dish. Sprinkle with half the ham mixture and 1/3 of the swiss cheese.   • To bake the strata, preheat oven to 350 degrees. Bake strata, still covered with foil, for 30 minutes. Remove foil and continue baking for 20-30 minutes, until cheese on top is melted and egg portion is set (check by inserting a knife in the center--if it comes back without egg on it, you're set!).
  • Let strata rest 5 minutes before serving.
