2 -3 lbs chuck roast or 2 -3 lbs other pot roast
salt and pepper (to taste)
1/2 cup all-purpose flour
1/4 cup vegetable oil
1 (16 ounce) bag frozen pearl onions
1 1/2 tablespoons instant minced garlic
2 celery ribs, chopped
1 tablespoon tomato paste
1 (14 1/2 ounce) can diced tomatoes
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 tablespoon Worcestershire sauce
1 (14 ounce) can beef broth
1 cup red wine

Steps:

  • Salt and pepper the roast, then dredge in flour.
  • Heat oil in a pan and brown the roast on each side.
  • Mix the rest of the ingredients in a crock pot.
  • Place roast in crock pot and spoon sauce over the top.
  • Cook on low for 6 hours.

1 boneless beef chuck roast (3 pounds)
1 tablespoon canola oil
8 medium potatoes, peeled and quartered
8 medium carrots, cut into chunks
1 medium onion, sliced
3 tablespoons all-purpose flour
1 cup water
1 can (8 ounces) tomato sauce
1 teaspoon beef bouillon granules
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a Dutch oven, brown roast on all sides in oil; drain. Add the potatoes, carrots and onion. In a large bowl, combine the flour, water, tomato sauce, bouillon, salt and pepper until smooth. Pour over the roast and vegetables. , Cover and bake at 325° for 2-1/2 to 3 hours or until the meat is tender.

8 tablespoons mayonnaise

Steps:

  • Lay out tortillas. Spread each tortilla with 2 tablespoons mayonnaise.
  • Layer each tortilla with 4 slices each of ham, Swiss cheese, roast beef, and American cheese.

4 lb angus bottom or top round roast
13 oz canned sliced mushrooms (undrained)
1 can(s) 14.9 ounce guinness draught beer
1/3 c worcestershire sauce
3/4 c all purpose flour
4 stalk(s) celery chopped into desired size pcs.
1 large bell pepper cut into desired pcs.
1 can(s) 14 1/2 oz. diced tomatoes undrained
1 pkg dry onion soup mix
1 large onion, cut into eights
1 Tbsp steak seasoning (like montreal)
1 Tbsp granulated garlic (not garlic salt)
2 tsp each cumin & paprika

Steps:

  • 1. Add the spices to a small bowl, then mix to blend together , and sprinkle liberally over all sides of the roast. Sprinkle about half cup of flour over all sides of the seasoned roast. RESERVING THE REMAINING QUARTER CUP FLOUR TO SPRINKLE OVER THE VEGGIES IN BOTTOM OF POT. PREHEAT THE OVEN TO 300 DEGREES F.
  • 2. Cut the onions into eights, add the chopped celery and place it in the bottom of a 6 quart Dutch Oven. Sprinkle 1/4 cup of the flour over the veggies. THESE ARE SOME OF THE REMAINING INGREDIENTS FOR THE ROAST.
  • 3. Place the beef roast into the Dutch oven. Then add the undrained mushrooms, diced tomatoes, beer and Worcestershire sauce around the perimeters of the pot.
  • 4. Sprinkle the onion soup mix around the side of the pot and on top of the roast.
  • 5. Cover with tight fitting lid and place in preheated 300 degree F oven and cook for 31/2 to 4 hours. Remove from oven, Remove lid, and allow roast to rest for about 10 to 15 minutes before slicing.
  • 6. Place roast in large platter, and slice with electric knife into desired slice size, surround beef roast with the cooked veggies & gravy, then serve with your favorite additional sides, pasta, rice or potatoes. ENJOY.

I didn't want to make the usual roast so used what was in the pantry and came up with this. I served it over mashed potatoes and it was great. Next time I may double the ingredients for more sauce.

1 can(s) diced tomatoes
1 can(s) tomato soup
4 beef bouillon cubes
1 pkg onion soup mix
1 c water
1 Tbsp sugar

Steps:

  • 1. Microwave water with beef bouillon cubes just to dissolve.
  • 2. Combine tomato soup, onion soup, can of diced tomatoes, sugar (optional) and water with bouillon. Pour over roast in crock pot.
  • 3. Peel carrots and add to crock pot. Green beans would be good also.

4-5 pound beef roast suitable for pot roasting
olive oil

14 oz can of crushed tomatoes
1/2 cup hoisin sauce
1 cup burgundy wine
1 bunch green onions

Steps:

  • Preheat oven to 300 degrees F. Season roast with pepper and salt to taste. In olive oil, brown roast on all sides in a heavy roasting pot on top of stove. Remove from heat. Add crushed tomatoes, hoisin sauce, wine and chopped green onions to pot, pouring over roast. Move roast to ensure liquids are beneath it. Cover and place in preheated 300 degree oven for 3 hours. Serve by slicing against grain, pour sauce over and garnish with freshly chopped green onions.

4 chicken legs with thigh, attached
salt
pepper
1 teaspoon smoked paprika
1/2 teaspoon canola oil
3 lbs butternut squash, peeled and diced
sugar
1/4 cup heavy cream
4 tablespoons unsalted butter
2 teaspoons cinnamon
1 1/2 lbs swiss chard, blanched and drained well
2 tablespoons olive oil
1/2 cup yellow onion, diced
1 1/2 teaspoons garlic, minced
1/2 cup chicken stock

Steps:

  • Preheat oven to 400°.
  • Season chicken with 1 teaspoon each salt, pepper and paprika.
  • heat canola oil in a sauté pan.
  • Sear chicken on each side for 5 minutes.
  • Transfer skin side up to a rack set in a sheet pan.
  • Roast until cooked through, 30 to 35 minutes.
  • Add 2 tablespoons each salt and sugar plus squash to a large pot of boiling water. Cook for 10 minutes and drain.
  • Place in a food processor. Add heavy cream, butter, cinnamon, 1 teaspoon salt and 1 1/2 teaspoon sugar. Process until smooth.
  • Keep warm.
  • Heat olive oil in a large pan. sauté onion until translucent, about 3 minutes.
  • Add garlic and cook 1 minute.
  • Add swiss chard. Add salt and pepper to taste. Add chicken stock.
  • Boil, then cook until broth reduces by half.
  • Spoon squash and swiss chard on plate. Top with chicken.
  • Serve -- Yum!
