3/4 cup uncooked elbow macaroni
2 tablespoons chopped onion
2 tablespoons butter
1 tablespoon all-purpose flour
1 cup fat-free milk
1 cup shredded Swiss cheese
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a small saucepan, saute onion in butter until tender. Stir in flour until smooth; gradually add milk. 4 Tbsp butter
2 large onions, thinly sliced
2 large potatoes, peeled and cut into 1/2 - 1 inch cubes
1 lb macaroni pasta, or pasta of your choice
1/2 c cream
salt and pepper to taste
1 c grated, gruyere or emmentaler cheese
applesauce for serving

Steps:

  • 1. Preheat oven to 375 degrees F. Lightly grease large casserole dish.
  • 2. Bring large pot of salted water to a boil.
  • 3. In a large frying pan, melt butter over medium low heat. Add the onions and cook, stirring occasionally, until golden brown.
  • 4. Once water comes to a boil, add cubed potatoes. As They begin to soften, about 5 minutes, add pasta. Cook, stirring occasionally, until potatoes are tender and pasta is just tender, about 7 minutes. Drain and gently rinse with cold water.
  • 5. In a small bowl, season with salt and pepper cream.
  • 6. Add 1/3 of pasta and potatoes to the bottom of prepared dish. Evenly cover with 1/2 of grated cheese.
  • 7. Top with another 1/3 of pasta and potatoes, then top with remaining cheese, then remaining pasta and potatoes.
  • 8. Pour the cream over the layers. Evenly cover with caramelized onions.
  • 9. Cover and bake in preheated oven until heated through and cheese is melted, 10-15 minutes.
  • 10. Serve hot over applesauce.

5 tablespoons all-purpose flour
2 cups whole milk
salt
white pepper
1 pinch ground nutmeg
8 ounces dry elbow macaroni (uncooked)
8 ounces domestic swiss cheese, grated (2 cups grated)
8 ounces ham, cubed
1 cup frozen baby peas, thawed
1/4 cup grated parmesan cheese

Steps:

  • In a 2 to 3 quart sauce pot, melt butter over medium heat.
  • Add the flour and stir for 2 minutes.
  • Slowly add the milk, whisking to combine.
  • Bring to a simmer, add the salt, white pepper and nutmeg.

10 ounces firm waxy potatoes, roughly diced
5 ounces streaky bacon, rinds removed and diced small
7 ounces whipping cream
1 pinch freshly grated nutmeg
4 ounces parmesan cheese, freshly grated
1 ounce butter, plus extra for greasing
1 onion, sliced

  • Heat oven to 350*F.
  • Lightly butter a large ovenproof gratin dish.
  • Cook the macaroni and potatoes in boiling salted water for 10 minutes, until just tender.
  • Dry fry the bacon in a large non stick pan until lightly golden.
