1 loaf rye cocktail bread
8 ounces grated swiss cheese (I grate my own and domestic works fine)
1 (6 ounce) package hormel pepperoni slices, chopped
1/2 small onion, finely minced
mayonnaise, enough to bind (I have never measured this - I add mayo to the mixture until it holds together, it's hard to mess th)

Steps:

  • Preheat oven to 375 degrees.
  • Line baking sheet with foil.
  • Mix all ingredients (except for bread) together.
  • Spread cheese/pepperoni mixture onto the rye breads and place them on baking sheet (s).
  • Bake for 12-15 minutes, or until the cheese is browned and bubbling (the bottom of the breads should become brown and crispy).

1 tablespoon olive oil
1 lb Italian sausage, remove meat from casings (use spicy if you like heat)
1 cup sweet onion, diced
2 tablespoons fresh basil (chopped or sliced)
1/2-1 cup spaghetti sauce or 1/2-1 cup pizza sauce
1 cup swiss cheese, grated

Steps:

  • On 2 baking sheets covered with either parchment paper or a silicone non-stick baking mat, place 5 biscuits on each. With your fingers, press biscuits down and stretch them until they are about 6 inches wide. They will be quite thin. Bake crusts for the same time that the package says to cook the biscuits or until lightly browned.
  • While the crusts are baking, heat olive oil in a frying pan over medium heat. Add sausage meat and break up as you stir, for about 3 minutes. Add onion and sauté for 5 more minutes. Turn off heat when meat is cooked and onions are soft. Stir in basil.
  • When pizza crusts are done, add a spoonful of sauce to the top of each one, using as much or as little as you like. Divide sausage mixture between the crusts. Top with grated cheese.
  • Bake for 8 to 10 more minutes or until cheese is melted. Make sure that crusts do not burn.
  • Cut and serve.

2 tablespoons extra virgin olive oil
1 1/4 pounds onions, sliced
1 teaspoon chopped fresh thyme leaves
2 garlic cloves, minced

freshly ground pepper
1/2 pound chard, stemmed, leaves washed
1 14-inch pizza crust (1/2 batch pizza dough)
3/4 cup ricotta (6 ounces)
2 ounces Parmesan, grated 1/2 cup, tightly packed
1 egg yolk

Steps:

  • Thirty minutes before baking the pizza, preheat the oven to 500 degrees. Heat the olive oil over medium heat in a large, heavy skillet. Add the onions. Cook, stirring often, until tender and just beginning to color, about 10 minutes. Add the thyme, garlic and a generous pinch of salt. Turn the heat to low, cover and cook another 10 to 20 minutes, stirring often, until the onions are golden brown and very sweet and soft. Remove from the heat.
  • While the onions are cooking, stem and wash the chard leaves, and bring a medium pot of water to a boil. Fill a medium bowl with ice water. When the water comes to a boil, salt generously and add the chard. Blanch for one to two minutes, just until the leaves are tender, and transfer to the ice water. Drain and squeeze out excess water. Alternatively, steam the chard for two to three minutes until wilted, and rinse with cold water. Chop the chard medium-fine.
  • Roll out the dough, oil a 14-inch pizza pan and dust with cornmeal or semolina. Place the dough on the pan.
  • In a medium bowl, combine the ricotta, egg yolk, Parmesan and chard. Spread over the pizza dough in an even layer, leaving a 1-inch border around the rim. Spread the onions over the ricotta mixture.
  • Place in the hot oven, and bake 10 to 15 minutes until the crust and bits of the onion are nicely browned. Remove from the heat, and serve hot or warm.
