4 Chicken Breasts (or enough to fill pan)
6 Slices Swiss Cheese
1 can Cream of Chicken Soup
1/4 cup milk
Stove Top Turkey Stuffing (about 1/2 box)
¼ c butter

Steps:

  • Cover bottom of pan with chicken.
  • Lay Swiss Cheese over chicken.
  • Mix 1 can cream of chicken soup and 1/4 cup milk.
  • Pour mixture over chicken.
  • Top with 1/2 bag (or more) of Stove Top Turkey Stuffing.
  • Drizzle 1/4 cup butter on top.
  • Bake at 350 for 45-60 minutes.
  • Serve over rice.
  • FREEZER INSTRUCTIONS - After pouring cream of chicken mixture over chicken go ahead and freeze. When you are ready to cook it, pull it out of the freezer and let it thaw in fridge (preferable overnight). Then complete the rest of the instructions (top with stuffing/butter & bake).

1/4 cup sliced almonds
1/2 cup mayonnaise
1 teaspoon fresh lemon juice
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper
2 cups finely chopped cooked chicken
1/4 cup finely chopped celery
2 tablespoons finely chopped green onions (2 medium)
1 tablespoon diced pimientos, drained
1/4 cup butter
1 1/2 cups water
1/2 cup Gold Medal™ all-purpose flour
1/8 teaspoon salt
2 eggs
1/2 cup shredded Swiss cheese (2 oz)

Steps:

  • Heat oven to 350°F. Spread almonds in ungreased shallow pan. Bake uncovered 6 to 10 minutes, stirring occasionally, until light brown. Cool. Increase oven temperature to 400°F.
  • In medium bowl, stir together mayonnaise, lemon juice, 1/2 teaspoon salt and the pepper. Add chicken, celery, onions and toasted almonds; stir well. Cover; refrigerate until chilled.
  • Meanwhile, in 2-quart saucepan, heat butter and water to boiling over medium-high heat. Add flour and 1/8 teaspoon salt. With wooden spoon, beat vigorously over low heat until mixture forms a ball. Remove from heat. Add eggs, one at a time, beating vigorously with wooden spoon after each addition until mixture is smooth and glossy. Stir in cheese. Line cookie sheet with cooking parchment paper. Onto cookie sheet, drop dough by heaping teaspoonfuls.
  • Bake 14 minutes or until puffed and golden brown. Remove from cookie sheet to cooling rack; prick side of each puff with tip of sharp knife to release steam. Cool completely.
  • Stir pimientos into chicken salad. Using sharp knife, cut off tops of puffs; spoon chicken salad onto bottoms. Replace tops.

1 tablespoon butter
2/3 cup sweet onion, diced fine
2 teaspoons fresh garlic, minced
1/2 lb cooked chicken, shredded
8 oz creamy garlic and herb Swiss cheese
Himalayan OR Kosher salt
freshly ground black pepper
2 packages Puff Pastry Dough (I use Wewalka)
1 egg (for egg wash)

Steps:

  • Cook the minced onion in a skillet with the butter on low heat until they are translucent.
  • Add the minced garlic and cook 1-2 minutes more.
  • Turn up the heat to medium and add the diced chicken breast and stir frequently.

4 chicken breasts, boneless and skinless
seasoning salt
black pepper (or use white salt)
1 sheet puff pastry (use half of a package or use the 2 sheets for 8 pastries)
1 egg
1 tablespoon cold water
8 teaspoons Dijon mustard
4 slices cooked ham
4 slices swiss cheese (can 8 slices, 2 slices for each pastry)

  • Lightly grease an 11 x 7-inch baking dish (if you are making 8 chicken pastries use a 13 x 9-inch baking dish).
  • In a skillet melt the butter with oil.
