BROCCOLI CHEESE (SWISS) SOUP - RACHAEL RAY
Please note: This recipe calls for 10 oz small yellow-fleshed potatoes (like Yukon Gold or similar). FYI, this is approx. 2 small potatoes. (It was difficult to write this out in the recipe, so i just decided to note it here.) This is a nice, filling soup that is easy to make. When I made this, I subbed about half the water with leftover chicken broth. However, I'm sure it tastes just as good (w/out the broth). This is part of a "two-for" recipe, which originally included a recipe for Ham-and-Swiss Toasts (for serving alongside) for a complete meal idea. I have posted the Ham and Swiss Toasts separately. Steps:
- 1. Combine the first 4 ingredients in the container of a blender or food processor. Process on high for 1 minute or until smooth, stopping once to scrape down the sides. Set aside.
- 2. Combine the broccoli and the next 6 ingredients in a large bowl. Add the reserved cottage cheese mixture; stir well. Pour into a lightly greased shallow 2 quart casserole dish.
- 3. Melt 2 tablespoons butter in a small saucepan over low heat; add the breadcrumbs and cook until golden, stirring occasionally. Remove from the heat; stir in the bacon.
- 4. Sprinkle the breadcrumb mixture over the casserole. Bake uncovered at 350 degrees for 45 minutes or until thoroughly heated.
Tips:
- Use fresh or frozen broccoli florets. Fresh broccoli is best, but frozen broccoli is a great option if you don't have fresh broccoli on hand. Just be sure to thaw the broccoli before using it.
- Cut the broccoli florets into small pieces. This will help them cook evenly.
- Use a large skillet or Dutch oven. This will give the broccoli plenty of room to cook without overcrowding.
- Cook the broccoli over medium heat. This will help prevent the broccoli from getting mushy.
- Stir the broccoli occasionally. This will help ensure that the broccoli cooks evenly.
- Don't overcook the broccoli. Broccoli is best when it is still slightly crisp.
- Add the cheese sauce to the broccoli just before serving. This will help prevent the cheese sauce from becoming too thick.
Conclusion:
Swiss cheese broccoli is a delicious and easy-to-make side dish that is perfect for any occasion. It is a great way to get your daily dose of vegetables, and it is also a good source of calcium and protein. So next time you are looking for a healthy and tasty side dish, give Swiss cheese broccoli a try!
