BROCCOLI CHEESE (SWISS) SOUP - RACHAEL RAY

Broccoli Cheese (Swiss) Soup - Rachael Ray image

Please note: This recipe calls for 10 oz small yellow-fleshed potatoes (like Yukon Gold or similar). FYI, this is approx. 2 small potatoes. (It was difficult to write this out in the recipe, so i just decided to note it here.) This is a nice, filling soup that is easy to make. When I made this, I subbed about half the water with leftover chicken broth. However, I'm sure it tastes just as good (w/out the broth). This is part of a "two-for" recipe, which originally included a recipe for Ham-and-Swiss Toasts (for serving alongside) for a complete meal idea. I have posted the Ham and Swiss Toasts separately. Tips:

  • Prep Your Ingredients: Chop your vegetables and measure out your spices before you start cooking. This will help you stay organized and ensure that you don't miss anything.
  • Use Good Quality Ingredients: The fresher your ingredients, the better your soup will taste. Look for vegetables that are crisp and brightly colored, and use fresh herbs if possible.
  • Don't Overcook the Vegetables: You want the vegetables in your soup to be tender but still have a bit of a bite to them. Overcooked vegetables will become mushy and lose their flavor.
  • Use a Good Stock: The stock you use will make a big difference in the flavor of your soup. Use a homemade stock if you have it, or look for a low-sodium store-bought stock.
  • Season to Taste: Don't be afraid to taste your soup as you're cooking and adjust the seasonings as needed. You may need to add more salt, pepper, or herbs to get the perfect flavor.
  • Serve with Your Favorite Toppings: You can enjoy broccoli soup on its own or with a variety of toppings. Some popular choices include croutons, shredded cheese, and sour cream.

Conclusion:

Swiss broccoli soup is a delicious and nutritious meal that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. With its creamy texture, cheesy flavor, and fresh vegetables, this soup is sure to be a hit with your family and friends.
