ZOPF (TRADITIONAL SWISS PLAITED BREAKFAST BREAD)

Zopf is a soft milk bread and is a family tradition with us; it is usually served with butter and jam, although can also be served with soft cheeses and cold meats. It is a breakfast or dinner bread. Number Of Ingredients 8

1 kg plain flour
1 tablespoon salt
30 g yeast (or a 1/4 ounce packet)
1 tablespoon sugar
125 g melted and cooled butter
650 -700 ml milk
1 egg yolk, thinned with
milk

Steps:

  • Mix together all ingredients except egg yolk to make a soft dough. Knead 10 minutes or so.
  • Divide into 4 and make long sausages with the dough.
  • Form the sausages into 2 square crosses.
  • Plait each cross, using a 4 strand plait, so that you end up with two loaves of plaited bread.
  • Put in the fridge until ready to bake- overnight, for example.
  • Paint the loaves with a little of the egg yolk.
  • Place a water bath under the oven shelf. Bake in the bottom half of a 220 degree Celcius preheated oven for 10 minutes, then turn the temperature down and bake at 200 degrees for 40 minutes.

1 package (28 ounces) frozen O'Brien potatoes, thawed
1 pound bacon strips, cooked and crumbled
2 cups shredded Swiss cheese
12 large eggs
2 cups 2% milk
1 teaspoon seasoned salt
1 teaspoon pepper
Minced chives, optional

Steps:

  • In a greased 4- or 5-qt. slow cooker, layer potatoes, bacon and cheese. In a large bowl, whisk eggs, milk, seasoned salt and pepper; pour over top. Cook, covered, on low until eggs are set, 4-5 hours. Turn off slow cooker. Remove crock insert to a wire rack; let stand, uncovered, 30 minutes before serving. Garnish with minced chives, if desired.

2 garlic cloves, pressed
2 tablespoons butter
1 teaspoon salt

2/3 cup uncooked quick-cooking grits
1 1/4 cups shredded swiss cheese, divided
8 large eggs, divided
1/2 lb cooked ham, diced
4 green onions, chopped
1/2 cup milk

Steps:

  • Bring first 6 ingredients to a boil in a medium saucepan; gradually whisk in grits.
  • Cover, reduce heat, and simmer, whisking occasionally, 5 to 7 minutes.
  • Add 1/2 cup cheese, stirring until cheese melts.
  • Remove from heat, and let stand 10 minutes. Lightly beat 2 eggs, and stir into grits mixture; pour into a lightly greased 10-inch-deep pie plate.
  • Bake at 350° for 20 minutes; remove from oven.
  • To freeze: Prepare and bake as directed. Allow to cool. Wrap well in plastic wrap and then foil. Freeze.
  • To serve: Thaw in fridge and reheat in oven.
  • Increase oven temperature to 400°.
  • Sauté ham and onions in a nonstick skillet over medium-high heat 5 minutes or until onion is tender.
  • Layer ham mixture evenly over grits crust.
  • Whisk together milk and remaining 6 eggs; pour over ham mixture.
  • Sprinkle remaining 3/4 cup cheese evenly over egg mixture.
  • Bake at 400° for 35 minutes.
  • Let stand 10 minutes, and cut into wedges.

I found this in a Diane Mott Davidson mystery book. It is SO easy and flavorful, put it together the night before then cook it on the stove top in the morning. Never a big fan of porridge or oatmeal, this one changed my mind. I use all sorts of different fruit depending on mood and what is at hand. Apples, blueberries, or banana along with the mentioned dried cherries work perfectly. As do raisins and nuts. The sitting overnight lets the fruit flavor permeate the oats and milk and you end up with ambrosia. hmm coconut would be good to try it with as well. lemon or lime zest? the combinations to taste are endless. *runs for my pantry*

6 large eggs
2 cups whole milk
2 teaspoons chopped fresh thyme plus additional sprigs for garnishing (or 1/2 teaspoon dried)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
8 slices plain white sandwich bread (crusts trimmed)
2 cups grated Swiss cheese (8 ounces)
1 slice of thick-cut bacon (cooked, drained, and chopped)

Steps:

  • In a medium saute pan, heat the olive oil and saute the onion and mushrooms until soft, about 5 - 6 minutes. Set aside.
