SPAGHETTI SQUASH I
The flesh of spaghetti squash comes out in long strands, very much resembling the noodles for which it is named. In this recipe, the 'noodles' are tossed with vegetables and feta cheese. You can substitute different vegetables, but be sure to use ones that have contrasting colors.

Tips for Making Sweetened Spaghetti Squash
- Choose a ripe spaghetti squash. The squash should be heavy for its size and have a deep yellow color.
- Pierce the squash with a fork several times before cooking. This will help the steam escape and prevent the squash from bursting.
- Cook the squash until it is tender. You can cook it in the oven, microwave, or Instant Pot.
- Use a fork to scrape the squash into spaghetti-like strands.
- Sweeten the squash with your favorite sweetener. You can use maple syrup, honey, stevia, or even granulated sugar.
- Add other spices and flavorings to taste. Some popular options include cinnamon, nutmeg, ginger, and vanilla extract.
- Serve the squash warm or cold. You can enjoy it on its own or use it as a side dish or topping for other dishes.
