Husband is diabetic and loves lemon pie! What to do? Make condensed milk with Splenda! We follow the lemon pie recipe on purchased can of condensed milk and substitute this recipe for the canned milk. Tastes good with the Splenda instead of sugar. You might like to try 1/2 Splenda and 1/2 sugar as an experiment. Still good.

2/3 c splenda sugar substitute
1/3 c boiling water
3 Tbsp melted butter

Tips:

  • Use a heavy-bottomed saucepan to prevent the milk from scorching.
  • Stir the milk constantly to prevent it from sticking to the bottom of the pan.
  • Use a candy thermometer to ensure that the milk reaches the correct temperature.
  • If you don't have a candy thermometer, you can test the milk by dropping a small amount into a bowl of cold water. If the milk forms a soft ball, it is ready.
