Time 35m

Yield 6 servings

Number Of Ingredients 6

1 1/2 pounds turnips, peeled and cut into 1-inch pieces
1 tablespoon unsalted butter
1 teaspoon sugar
1 to 2 teaspoons white balsamic or white wine vinegar
1 tablespoon chopped fresh chives
Kosher salt and freshly ground black pepper

Steps:

  • Spread the turnips in a single layer in a large skillet with a lid. Add enough water to cover the turnips halfway and then add the butter and sugar. Bring to a boil and then reduce the heat to maintain a simmer. Partially cover with the lid and simmer until the turnips are tender, 8 to 10 minutes. Uncover, increase the heat to high and continue to cook, stirring occasionally, until the liquid almost completely evaporates and the turnips are glazed. Remove from the heat and stir in the vinegar and chives; season with salt and pepper.

SPICED TURNIPS (SHALGAM MASALA)

Spiced Turnips (Shalgam Masala) image

I love turnips. This Northern Indian dish is great way to spice up traditional mashed turnips. This dish is great garnished with fresh cilantro or parsley and served with basmati rice, or with naan bread. The amount of chiles you use really controls the heat factor in this dish.

PICKLED TURNIPS

Pickled Turnips image

Finally, the underestimated and neglected turnip takes the stage. Oh that crunchy, fuchsia goodness! A staple in the Middle East, pickled turnips are the perfect addition to many dishes or wonderful on their own. This recipe will yield 2 Mason jars worth of pickled turnips, but I recommend making more than less since it does require planning ahead by 1 week.

1 tablespoon brown sugar
2 teaspoons butter, melted
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon ground ginger
1 dash ground allspice
3 turnips, peeled and each cut into 6 wedges (6 ounces each)

Tips:

  • Choose the right turnips: Look for small, tender turnips with smooth skin. Avoid turnips that are large, woody, or have blemishes.
  • Peel the turnips thinly: This will help the turnips cook evenly and prevent them from becoming tough.
  • Don't overcrowd the pan: When cooking the turnips, make sure to not overcrowd the pan. This will help them cook evenly and prevent them from steaming instead of frying.
  • Add the spices early: Adding the spices early in the cooking process will allow them to infuse their flavor into the turnips.
  • Use a high-quality honey: The honey in this recipe adds a touch of sweetness and helps to balance out the spiciness of the chiles. Use a high-quality honey for the best flavor.

Conclusion:

This sweet and spicy turnip recipe is a delicious and easy way to enjoy this healthy vegetable. The turnips are roasted until tender and then coated in a sweet and spicy sauce.
