1 lb ham, think sliced
1/4 c mayonaisse, (I use Hellman's)
1/4 c pepper jelly
2 stalks celery
1/4 c onion, diced

Steps:

  • 1. Cut up ham into roughly 1" x 1" chunks and place all ingredients in food processor. Pulse slowly so as not to end up with mush. It should be well mixed but still a little chunky. This is one if those recipes you can customize however you like. You could leave out the onion or celery or both and you can adjust the mayo and pepper jelly too if you want it more moist etc.... Serve this on your favorite biscuits, rolls or just eat on crackers!

6- to 8-lb fully cooked smoked bone-in gluten-free ham
1/2 cup packed brown sugar
1/3 cup maple-flavored gluten-free syrup
1/2 teaspoon ground mustard
1/8 teaspoon ground cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon ground cloves
Dash of ground nutmeg

Steps:

  • Heat oven to 325°F. Line shallow roasting pan with foil. Place ham, cut side down, on rack in pan. Insert ovenproof meat thermometer so tip is in thickest part of ham and does not touch bone.
  • Bake uncovered about 1 hour 30 minutes or until thermometer reads 135°F to 140°F. Meanwhile, in small bowl, mix remaining ingredients. Brush over ham during last 30 minutes of baking.
  • Cover ham loosely with foil and let stand 10 to 15 minutes for easier carving.

I have been making this salad for years and recently traveled from NJ to Oklahoma to make a batch for one of my friends. I have also Overnighted this salad to a friend in Dallas who simply loves it. Of course, I pack it in dry ice. It's fast, simple and great for a cocktail party on party rye, on toast or a bagel for breakfast, on rye with lettuce, thinly sliced onions and dill (or sweet)pickles and mayo for lunch or with pea soup and sandwich for dinner. It's down right Yummy!!! And make no changes to the ingredients because the salad will not taste the same.

1 ½ pounds cooked ham, chopped
¾ cup mayonnaise, or as needed
⅓ cup dried minced onion
⅓ cup dill pickle relish
¼ cup brown mustard

Steps:

  • Process the ham in a food processor until finely chopped but not pasty, about 6 or 7 pulses. You may need to do this in batches. Place the finely chopped ham in a large bowl and continue processing the remaining ham.
