These are famous in my family, and I always get asked for the recipe. Serve with rice or in tacos for a yummy and healthy meal!

1 tablespoon extra virgin olive oil
½ large red onion, chopped
2 tablespoons minced garlic
1 (14.5 ounce) can diced tomatoes with green chile peppers
¼ cup chopped fresh cilantro
3 tablespoons sugar
1 teaspoon cayenne pepper
1 dash chili powder
1 dash cumin
1 dash ground cinnamon
1 (15 ounce) can black beans

Steps:

  • Warm oil in a skillet over medium heat. Stir in onion, and cook about 2 minutes; then stir in garlic, and cook until onion is soft and translucent. Stir in tomatoes, cilantro, and sugar. Season with cayenne pepper, chili powder, cumin, and ground cinnamon. Cook for 10 minutes. Stir in black beans, and bring to a simmer. Reduce the heat to low, cover, and simmer 1 hour or longer.

1 (15.25 ounce) can whole kernel corn, drained
1 red onion, diced
¾ cup salsa, or as desired
½ cup olive oil
½ cup chopped fresh cilantro
3 cloves garlic, minced
2 tablespoons lemon juice
1 tablespoon red wine vinegar
1 ½ teaspoons ground cumin
1 teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Mix black beans, corn, red onion, salsa, olive oil, cilantro, garlic, lemon juice, vinegar, cumin, salt, and black pepper in a large bowl. Cover and refrigerate at least 1 hour to 2 days. Serve chilled.

It's worth the bit of mincing and is a great dish to make ahead of time. This can be served as a salad, but I've always made it as an appetizer dip, served with tortilla chips.

2 (15 ounce) cans black beans, drained and rinsed
1 1/2 cups sweet corn (I use frozen, thawed)
2 fresh jalapeno peppers, seeded and minced
1/2 cup green onion, minced
1/2 cup fresh cilantro, minced
1/4 cup fresh lime juice
1/4 cup canola oil
2 tablespoons brown sugar
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon ground pepper

Steps:

  • In a jar or container with tight-fitting lid, combine lime juice, oil, brown sugar, mustard, salt and pepper. Shake until completely blended.
  • In a separate bowl, combine beans, corn, green onions, jalapeno and cilantro.
  • Pour dressing over bean mixture and toss to coat.
  • Cover and chill for atleast an hour or up to a day. If a day, give it a stir or two.
  • To serve as a salad, arrange with cabbage or lettuce leaves. Add more cilantro to make it pretty on top, if you wish.
  • To serve as an appetizer, I like to eat it with tortilla chips.

SALAD
2 can(s) black beans, rinsed and drained (16 ounce each)
1 c green bell pepper, diced
3/4 c red bell pepper, diced
1/3 c white onions, diced
1 c corn, can use canned and drained, or frozen
1 Tbsp jalapeno peppers, diced
1 tsp garlic powder
1/4 c cilantro, chopped

  • 1. Mix all DRESSING ingredients well.
  • 2. In a large bowl, add all SALAD ingredients.
  • 3. Pour the dressing over the well combined salad ingredients.
  • 4. Mix together to combine and refrigerate for several hours for flavors to blend.

Tips:

  • For a spicier dip, add an extra jalapeno pepper or a pinch of cayenne pepper.
  • For a sweeter dip, add an extra tablespoon of honey or maple syrup.
