1 medium onion, chopped
1 tablespoon canola oil
1 garlic clove, minced
1 to 3 teaspoons chili powder
1/4 teaspoon cayenne pepper
1/4 teaspoon coarsely ground pepper
1 cup ketchup
1/3 cup molasses
2 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
2 tablespoons spicy brown mustard
1/2 teaspoon hot pepper sauce

Steps:

  • In a large saucepan, saute onion in oil until tender. Add garlic; cook 1 minute. Stir in the chili powder, cayenne and pepper; cook 1 minute longer. , Stir in the ketchup, molasses, vinegar, Worcestershire sauce, mustard and pepper sauce. Bring to a boil. Reduce heat; simmer, uncovered, for 30-40 minutes or until sauce reaches desired consistency. Cool for 15 minutes. , Strain sauce through a fine mesh strainer over a large bowl, discarding vegetables and seasonings. Store in an airtight container in the refrigerator up to 1 month. Use as a basting sauce for grilled meats.

It's like American barbecue sauce, which makes sense, as it's often used with grilled Korean specialties like bulgogi (marinated shaved beef), galbi (thinly sliced short ribs) and pork belly. Its main ingredient, doenjang, is a slow-fermented soybean paste that is similar to Japanese miso, providing the same rich umami flavor. Any Asian food market would stock multiple brands of doenjang; one of our favorite Korean cooking teachers, Emily Kim, a.k.a. Maangchi, advises simply, "Buy the most expensive one!"

1 15-ounce can tomato sauce
1 cup cider vinegar
1 large onion, chopped
6 tablespoons Dijon mustard
1 tablespoon plus 1 teaspoon dried thyme, crumbled

1 teaspoon cayenne pepper
2 chickens, each cut into 6 pieces

I have made this for years, with a little tweak here and there and finally think I have it perfected. It has just enough bite from the vinegar, but a subtle sweetness too. I make quadruple batches and store it in old mayo jars in my garage fridge for quick meals. The longer you simmer it, the better it gets!

2 tablespoons butter
1 cup onion, chopped
2 1/2 teaspoons salt
6 garlic cloves, minced
1/2 cup maple syrup
1/4 cup molasses
1 cup vinegar
1 1/2 cups catsup
2 1/2 cups chicken stock
3 beef bouillon cubes
1 1/2 tablespoons Worcestershire sauce
1 teaspoon liquid smoke
1/4 teaspoon black pepper
Tabasco sauce

Steps:

  • Melt butter in a large stewpot over med-high heat.
  • When the bubbling subsides add the onions all at once.
  • Sprinkle with the salt and cook for 5-8 minutes, stirring often, until golden.
  • Add the garlic and cook for another minute until fragrant.
  • Add the syrup, molasses, vinegar and catsup. (At this point I use a hand blender to puree the onions, but this is optional).
  • Bring to a boil, then reduce the heat to med-low.
  • Add the remaining ingredients and continue to simmer until thick and bubbly, at least 30 minutes. The longer you simmer it, the better it will be.

Tips:

  • Make sure to use a good quality ketchup as it will be the base of your sauce.
  • You can adjust the sweetness and spiciness of the sauce to your liking by adding more or less brown sugar and chili powder.
  • If you don't have any liquid smoke, you can add a teaspoon of smoked paprika instead.
  • Let the sauce simmer for at least 30 minutes so that the flavors can develop.
  • Use the sauce on your favorite grilled or roasted meats, vegetables, or even tofu.
