SWEET & SAVORY SPICED NUTS

Sweet & Savory Spiced Nuts image

I found this recipe on familyfun.com They used pecans in the recipe, but I am sure you could sub any nuts you choose. They use a bit of canola or corn oil in the glaze, you could use a mild flavoured olive oil as well. These would be a great addition to any holiday goodie basket. They do say to avoid putting the nuts in plastic bags because the coating will rub off. The best method to package them would be in a small glass bowl wrapped with cellophane, or in a small decorative tin.

Yield Makes 2 cups

Number Of Ingredients 10

1 cup hazelnuts (5 ounces)
1/2 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon salt
1/8 teaspoon ground allspice
1 tablespoon lightly beaten egg white
1 cup whole blanched almonds (5 1/2 ounces)
Special Equipment
parchment paper

Steps:

  • Put oven rack in middle position and Preheat oven to 350°F.
  • Toast hazelnuts in 1 layer in a large shallow baking pan (1 inch deep) until pale golden and skins are blistered, 10 to 15 minutes. Wrap nuts in a kitchen towel and let steam 1 to 2 minutes, then rub off any loose skins in towel (don't worry if some skins don't come off). Cool nuts completely on plate.
  • Reduce oven temperature to 325°F and line shallow baking pan with parchment paper.
  • Whisk together sugar, cinnamon, nutmeg, and allspice in a large bowl.
  • Whisk egg white in small bowl until foamy, then add hazelnuts and almonds and toss to coat. Transfer nuts to sugar mixture and toss to coat.
  • Arrange nuts in 1 layer in pan and bake, shaking pan occasionally, until golden brown, 20 to 25 minutes. Cool nuts completely in pan on a rack.

Tips:

  • Choose the right nuts. Any type of nut can be used, but some nuts are better suited for this recipe than others. Almonds, pecans, walnuts, and cashews are all good choices.
  • Use fresh spices. The fresher the spices, the more flavorful the nuts will be. If you can, buy whole spices and grind them yourself just before using.
  • Don't overcrowd the pan. When roasting the nuts, make sure to spread them out in a single layer. This will help them to cook evenly.
  • Roast the nuts until they are fragrant and golden brown. Keep a close eye on the nuts while they are roasting, as they can burn easily. Once they are fragrant and golden brown, remove them from the oven and let them cool.
  • Store the nuts in an airtight container. Once the nuts have cooled, store them in an airtight container in a cool, dry place. They will keep for up to 2 weeks.

Conclusion:

Sweet spiced nuts are a delicious and easy snack that can be enjoyed by people of all ages. They are also a great way to use up leftover nuts. With just a few simple ingredients, you can make a batch of sweet spiced nuts that will be sure to please everyone. So next time you are looking for a healthy and tasty snack, give this recipe a try. You won't be disappointed!
