Quick Sausage Meatballs with a Tomato and Basil Sauce, Spaghetti and Sweet Raw Peas image

This is a fantastic recipe that completely celebrates everything I love about peas. Even though they only make an appearance right at the end, it's a star performance. I like to serve a pile of unshelled peas in the middle of the table so that everyone gets to shell some over their own plate. It's also an incredibly fast recipe - you can be sitting down to eat within a minute of the pasta being done. The key to getting it right, though, is to buy really good-quality sausages

Olive oil
8 good-quality pork sausages
1 pound spaghetti
Sea salt
A few sprigs fresh marjoram, thyme or rosemary, leaves picked
11 ounces fresh peas, in their pods
1 block Parmesan, to serve
Olive oil
2 cloves garlic, peeled and finely sliced
1 small bunch fresh basil, leaves picked, stalks finely chopped
2 (14-ounce) cans good-quality plum tomatoes
Sea salt and freshly ground black pepper
Good quality balsamic vinegar

Steps:

  • Heat a large saucepan and add a few glugs of olive oil. Snip the sausages apart, then squeeze and pinch the meat out of the skins so that you get little meatball shapes - don't make them too big or they will take too long to cook. Try to get at least 3 balls out of each sausage. Don't worry about rolling them into perfect balls and making them look all fancy - rough and rustic is good! Put them into your pan. Keep frying and turning the meatballs until they're golden brown and cooked through.
  • Meanwhile, put the spaghetti into a large pan of salted boiling water and cook according to the package instructions until al dente.
  • To make your tomato sauce, heat a separate pan and pour in some olive oil. Add the garlic and the chopped basil stalks and move them around the pan for a couple of minutes. Put some small basil leaves aside for later, and sprinkle the rest into the pan. Add the tomatoes and season carefully with salt and pepper, to taste. Bring to a simmer, break up your tomatoes a bit more with a spoon and add a swig of balsamic vinegar - it's lovely for adding sweetness to the sauce.
  • Add the herbs to the pan of sausage meatballs, tossing everything in all the lovely flavors. Cook for around 30 seconds. When your spaghetti is cooked, drain it and divide the pasta and meatballs between 4 bowls. Spoon over the tomato sauce. Sprinkle over the reserved basil leaves and serve with a handful of fresh peas per person in the middle of the table, so that everyone can have a go at shelling their own, and a little Parmesan for grating or shaving over the top.

2 tablespoons vegetable oil
½ onion, minced
½ green bell pepper, chopped
1 pound ground beef
4 slices bacon
2 (4 ounce) jars mushrooms, drained
1 (29 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 tablespoons garlic powder
2 tablespoons dried oregano
½ cup white wine
¾ cup sugar
salt and pepper to taste

Steps:

  • In a skillet over medium heat, cook onion and bell pepper in oil until transparent. Add beef to onions and peppers; cook until brown. Set aside.
  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Reserve drippings and crumble bacon. Combine drippings and crumbled bacon with the beef mixture.

1/2 lb ground chuck
1 onion, diced small
14 1/2 ounces peeled diced tomatoes (canned)
1 garlic clove (peeled, chopped)
1/2 cup fresh parsley
1/4 teaspoon sweet basil
salt
pepper
29 ounces tomato sauce (canned)
1/4 cup sugar
1/8 teaspoon cinnamon (optional)

Steps:

  • Brown Ground Chuck, drain.
  • Add onions and cook until onions are transparent.
  • Add tomatoes (juice and all), garlic, fresh parsley, basil, salt and pepper.
  • Simmer until most of the juice is gone.
  • Add tomato sauce and sugar. (may have to adjust sugar amount to taste).
  • Simmer an hour or until the consistency you like.
  • Serve over spaghetti noodles, or we prefer angel hair pasta.

1 (2 ounce) envelope onion soup mix
1/3 cup grape jelly

1 1/2 teaspoons ground ginger
1 1/2 teaspoons garlic, minced

Steps:

  • Cook spaghetti.
  • While spaghetti is cooking, microwave frozen vegetables in order to defrost (about 3 minutes).

6 cups tomato puree (I use half of a #10 can for a recipe for us, and we get leftovers. You can freeze the other half)
2 (15 ounce) cans tomato sauce
2 (6 ounce) cans tomato paste
1 1/2 cups sugar
1 lb spaghetti noodles (or your favorite pasta)

Steps:

  • Combine all ingredients in a crock pot. Cook on Low for 6 hours, or can be done on High for 3. Stir occasionally. Will turn a darker shade of red, and have a nice sweet flavor and aroma. Can be done on the stove top, but needs more constant attention.
  • I will throw it in the morning on low, and leave it until dinner time (my crock pot keeps things warm until you shut it off) and it tastes wonderfully!
  • This sauce freezes beautifully, so does the leftover puree. Can be frozen for up to 4-6 months. Can be reheated in the microwave or however you would like.

2 teaspoons extra virgin olive oil
3 cloves garlic, crushed
1 lb extra lean beef
1 large onion, chopped
1 green pepper, chopped
2 (28 ounce) cans tomatoes
2 (5 1/2 ounce) cans tomato paste
1/2 cup vegetable stock
1 (14 ounce) can sliced mushrooms
1 teaspoon basil
2 bay leaves
salt
1/4 teaspoon fresh ground pepper

Steps:

  • Heat oil in bottom of Dutch oven.
  • Cook garlic, onions,& green peppers for 3 or 4 minutes.
  • Add beef,& brown, not stirring too much, because you want chunks of beef.
  • Turn a few cranks of freshly ground pepper over beef as you cook.
  • When beef is browned, add tomatoes, tomato paste, vegetable stock, mushrooms, basil, salt& 1/4 tsp pepper.
  • Just as sauce begins to bubble, add the bay leaves, then simmer 1& 1/2 hours.
