I created this recipe by changing a similar chicken salad recipe I have, and it's a big hit with my husband and kids alike. Also, I personlly don't like onion or celery by themselves, but I wouldn't leave them out of this recipe. Together, the flavors are all on point.

8 slices crusty bread
1/2 lb bacon
1 1/2 cups white meat chicken, coarsely chopped
1/2 cup celery, finely chopped
2 tablespoons green onions, finely chopped
1 green apple, peeled and chopped
1/4 cup pecans or 1/4 cup walnuts, chopped
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon Dijon mustard
2 1/2 teaspoons lemon juice
1/4 teaspoon salt
1/4 teaspoon white pepper
1 teaspoon sugar
4 -8 leaves green lettuce

Steps:

  • Combine chicken, celery, onion, apple, and nuts in a mixing bowl, place in the refrigerator while preparing the dressing.
  • Blend mayo, sour cream, dijon mustard, lemon juice, salt, white pepper, and sugar until creamy.
  • Add dressing to salad mixture, stir until salad is evenly coated and refrigerate while preparing bacon. If your bacon is precooked, let chicken salad chill for 15 to 20 minutes.
  • Prepare bacon so that is crispy, but not charred. Drain well.

2 1/2 cups buttermilk
4 cups all-purpose flour
4 chicken breasts, fat removed
4 cups sweet and sour sauce
4 brioche buns
4 slices provolone
4 leaves romaine lettuce
4 Roma tomato slices

Steps:

  • Preheat oil in a deep-fryer.
  • Lay out 2 deep-sided plates. Add buttermilk to one plate and the flour to the second. Dip each piece of chicken in the buttermilk, then lay in the flour, coating thoroughly.
  • Add to deep fryer and cook, 7 minutes. Set on a paper towel to soak up excess oil.

2 tablespoons low-sodium soy sauce
2 tablespoons mirin
1 teaspoon minced fresh ginger

2 cups pulled rotisserie chicken
4 Hawaiian sweet rolls, sliced
Butter, for toasting the rolls
Pickled Broccoli Slaw, recipe follows
1 jalapeno, thinly sliced
One 12-ounce bag broccoli slaw
1 cup white vinegar
1/4 cup sugar
1 teaspoon kosher salt

Steps:

  • Combine the hoisin, sweet chili sauce, soy, mirin, ginger and sesame oil in a small pot. Bring to a gentle simmer, lower the heat and cook about 5 minutes. Add in the chicken and toss to combine.
  • Meanwhile, toast the rolls in a skillet with a little butter until golden brown.
  • Divide the chicken mixture among the bottom rolls and top with some Pickled Broccoli Slaw and sliced jalapeno. Add the top rolls and serve.
  • Put the slaw in a medium heatproof bowl.

1/2 stick butter or margarine
1/4 c brown sugar
1/4 c finely diced red pepper
1/4 c finely diced yellow pepper
1 c pineapple tidbits/crushed pineapple, drained
3 Tbsp finely diced onion
1/2 tsp minced garlic (i use from a jar)
1 tsp mrs. dash kitchen blend seasoning
1 can(s) white meat chicken (10 0z.), drained & shredded
romaine or red leaf lettuce
4 slice 12-grain bread

Steps:

  • 1. Melt butter in nonstick skillet over medium heat. Add sugar, peppers, pineapple, onion and garlic. Sprinkle seasoning over and stir to combine. Let this mixture cook over medium¬high heat, stirring occasionally, until sauce starts to thicken and everything is tender.

1/4 cup soy sauce
1/4 cup sherry
1/4 cup rice vinegar
1 tablespoon brown sugar
1 tablespoon tomato paste
1 teaspoon crushed garlic

sweet hawaiian rolls and barbecue sauce for serving

  • Place the chicken breasts in the bottom of a 4-quart slow cooker. In a small bowl combine the soy sauce, sherry, rice vinegar, brown sugar, tomato paste, garlic, and ginger. Pour this mixture over the chicken. Cover the crock and cook on HIGH for up to 4 hours and on LOW for 6 hours. The chicken will be very tender and easy to shred.
