Time 10m

Number Of Ingredients 7

1 Tbsp olive oil
1/2 c rice wine vinegar
1/3 c sugar
1 granny smith apple, sliced thin
1 12-oz package broccoli slaw (typically broccoli, carrots & red cabbage)
1/2 c toasted pecans or walnuts
1/3 c dried cranberries

Steps:

  • 1. Mix together the oil, vinegar and sugar until well-blended. Set aside.
  • 2. In a large bowl, combine the broccoli slaw and sliced apples. Pour the vinegar dressing over the slaw and gently toss until everything is evenly coated. Add nuts & dried cranberries. Refrigerate until ready to serve.

Tips:

  • For a crunchier slaw, use a combination of broccoli florets and broccoli stems. The stems add a nice texture and flavor to the dish.
  • If you don't have red cabbage, you can use green cabbage instead. However, red cabbage gives the slaw a beautiful color.
  • To make a vegan version of this recipe, simply omit the honey and use a plant-based mayonnaise. You can also use agave nectar or maple syrup instead of honey.
  • This slaw is best served fresh, but it will keep in the refrigerator for up to 3 days. However, the broccoli may start to lose its crunch after a few days.
  • This recipe is a great way to use up leftover broccoli. You can also use leftover chicken, pork, or shrimp to make a more substantial slaw.

Conclusion:

Sweet and sour broccoli slaw is a delicious and refreshing side dish that is perfect for summer cookouts and picnics. It is also a great way to get your daily dose of vegetables. The slaw is made with a simple dressing of mayonnaise, vinegar, sugar, and spices. The broccoli, red cabbage, and carrots add a variety of textures and flavors to the dish. This slaw is sure to be a hit at your next gathering!
