1 green pepper
8 ounces chunk pineapple (reserve juice)
1/2 teaspoon salt
2 tablespoons vinegar
2 teaspoons soy sauce

Steps:

  • Peel carrots and cut on the diagonal. in wok add 1 cup water add carrots
  • Cook them until barely tender; add bell pepper that has been cut into 1 inch squares.
  • Cook 3 minutes; drain wok . Set carrots and peppers aside.
  • Drain pineapple, saving the juice. Add enough water to the juice to make 1/3 cup. Add salt, vinegar and soy sauce. put into wok

1 tablespoon all-purpose flour
¼ cup apple cider vinegar
2 tablespoons sugar

2 pounds carrots, peeled and boiled whole until tender and cut into 1/2-inch rounds
3 green peppers, cut into i-inch squares and steamed until tender
3 yellow onions, cut into i-inch wedges and steamed until tender
3/4 cup cider vinegar
3/4 cup white sugar
1 cup tomato puree
1 teaspoon dry mustard
1 teaspoon Worcestershire sauce
Salt and freshly ground black pepper to taste

Steps:

  • Combine all the vegetables in a large crock and set aside.
  • Combine the vinegar and the sugar in a saucepan over low heat. Cook for 5 minutes. Add the tomato puree, the mustard and Worcestershire sauce. Remove from heat. Pour over the vegetables and stir to completely combine. Taste and adjust seasoning with salt and freshly ground black pepper. Chill for at least 2 hours before serving.

8 bacon strips, diced
2 medium onions, halved and thinly sliced
1 cup packed brown sugar
1/2 cup cider vinegar
1 teaspoon salt
1 teaspoon ground mustard
1/2 teaspoon garlic powder
1 can (28 ounces) baked beans, undrained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (15 ounces) lima beans, rinsed and drained
1 can (15-1/2 ounces) black-eyed peas, rinsed and drained

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove with slotted spoon to paper towels. Drain, reserving 2 tablespoons drippings. Saute onions in the drippings until tender.
