Categories     Soup/Stew     Bean     Side     Simmer

Yield 6 servings

Number Of Ingredients 8

4 slices of bacon
1 cup chopped onion
4 garlic cloves
Water
1 lb. dried pinto beans, picked over and well-rinsed. (If possible let them sit overnight in water)
1 12-ounce bottle of dark beer
1 can diced green chili
2 t. hot sauce

Steps:

  • In a dutch over cook the bacon, onion and garlic. The bacon does not have to be completely cooked through but should not be limp. Turn off heat. Remove bacon and let it cool enough to handle. Keep the onion and garlic in the pan. Coarsely chopped the bacon and return to pan. Add the beans. Cover with water (one inch above) the beans. Gently simmer, uncovered over medium low heat. Stir occasionally. Keep the beans covered with water. After one hour add the beer, the green chili, the hot sauce, and the salt. Cook for an hour longer and check the beans. They should be soft but not mushy. The beans can cook for another half hour if necessary. Check for taste. Add salt or hot sauce if needed. Remove from heat. The heat from the pot and the beans will keep them warm for a half hour or longer. Reheat if needed. Can be made a day ahead. Leftovers can be mashed in a food processor and transformed into a bean dip.

BAKED BEANS

Fèves au Lard These beans boast two staples of Montreal cuisine -sweet maple syrup and rich salt pork.

Categories     Bean     Garlic     Mustard     Pork     Side     Bake     Bacon     Fall     Winter     Potluck     Maple Syrup     Gourmet     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free

Yield Makes 8 side-dish servings

Number Of Ingredients 8

1 lb dried navy beans (2 1/4 cups)
1 (1/4-lb) piece salt pork (rind discarded)
4 1/2 cups water
1 large onion, finely chopped (about 2 cups)
2 chopped garlic cloves
1/2 cup Grade B maple syrup
1 tablespoon dry English mustard (preferably Colman's)
1 teaspoon freshly ground black pepper

Steps:

  • Pick over and rinse 1 lb dried navy beans (2 1/4 cups). Soak in cold water to cover by 2 inches at least 8 hours. Alternatively, quick-soak beans (see cooks' note, below). Drain.
  • Put oven rack in middle position and preheat oven to 350°F. Rinse and pat dry 1 (1/4-lb) piece salt pork (rind discarded), then cut into 3 pieces.
  • Put beans and pork in an ovenproof 3-quart heavy pot with a lid. Add 4 1/2 cups water, 1 large onion (finely chopped; about 2 cups), 2 chopped garlic cloves, 1/2 cup Grade B maple syrup, 1 tablespoon dry English mustard (preferably Colman's), and 1 teaspoon freshly ground black pepper and stir to combine. Cover pot and bake until beans are just tender, 3 to 4 hours.
  • Reduce oven temperature to 325°F. Remove lid. Bake beans, stirring occasionally, until most of liquid is absorbed but beans are still saucy, 1 to 1 1/2 hours more. Remove from oven. Stir in 1 tablespoon cider vinegar and 1 teaspoon salt or more to taste.

Tips:

  • Choose the right beans: Navy beans are the classic choice for baked beans, but you can also use other varieties like pinto beans, black beans, or kidney beans.
  • Soak the beans overnight: This will help to soften the beans and reduce the cooking time. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute and then letting them sit for 1 hour.
  • Use a variety of ingredients: Don't be afraid to experiment with different ingredients in your baked beans. Some popular additions include bacon, sausage, onions, peppers, and celery.
  • Season the beans well: Baked beans should have a good balance of sweet and savory flavors. Be sure to add plenty of salt, pepper, and brown sugar.
  • Cook the beans until they are tender: The beans should be cooked until they are tender but not mushy. This usually takes about 1-2 hours in the oven.
  • Serve the beans hot: Baked beans are best served hot. You can serve them as a main course or as a side dish.

Conclusion:

Baked beans are a classic comfort food that is easy to make and can be enjoyed by people of all ages. With a few simple ingredients and a little bit of time, you can create a delicious pot of baked beans that will be the hit of your next party or gathering.
