SUMMERTIME SLAW
As a change from mayonnaise-laden slaw, I created this refreshing alternative. It uses many of the garden vegetables I grow, so it's also economical. I serve it at our family reunion each Fourth of July, and it's always a big hit at get-togethers. -Sharon Payne, Mayfield, Kentucky

NANA'S SOUTHERN COLESLAW
Just an old family recipe that I have been told is reminiscent of KFC coleslaw. You be the judge! To speed things up I sometimes just buy an already shredded bag of cabbage with carrots in it and then just chop it a little finer.

The sweetness of this coleslaw pairs well with savory smoked meats dressed in tangy BBQ sauce. Sam Jones teaches you a great way to mince it by hand.

Steps:
- Slice cabbage into quarters; cut away the core, which is bitter. Peel and discard outer layers of cabbage until you get to the first unblemished layer of leaves. Break up the remaining layers of leaves and place in a bowl. Use a chopper to chop the cabbage by hand in the bowl, or chop on a flat work surface using a sharp knife. (Optional: Pulse cabbage in a food processor to a minced consistency.) Place minced cabbage back into the bowl.
- Once cabbage is minced, add mustard, mayonnaise, salad dressing spread, and sugar. Toss well to combine. After several minutes, the cabbage will begin to release moisture. Cabbage is fully mixed when a spoon pressed down on the slaw yields pooled liquid. Serve.
Tips:
- For a sweeter slaw, use a sweeter variety of cabbage, such as red cabbage or Savoy cabbage.
- If you don't have any sweet relish, you can make your own by finely chopping a cup of bread and butter pickles.
- For a spicier slaw, add a pinch of cayenne pepper or red pepper flakes.
- If you want a creamier slaw, stir in a few tablespoons of mayonnaise or sour cream.
- For a healthier slaw, use a low-fat or fat-free mayonnaise or sour cream.
- For a vegan slaw, use a plant-based mayonnaise or sour cream.
- Serve the slaw immediately or store it in the refrigerator for up to 3 days.
Conclusion:
Sweet relish slaw is a versatile dish that can be served as a side dish, a topping for sandwiches or tacos, or even as a salad. It's easy to make and can be customized to your liking. So next time you're looking for a quick and easy side dish, give sweet relish slaw a try!
