Categories     Yam/Sweet Potato

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 7

1/2 cup seedless raisin
1/4 cup brandy
4 medium sweet potatoes, boiled until just tender then peeled and sliced into 1/4 inch slices
2/3 cup packed brown sugar
1/4 cup margarine
2 tablespoons water
1/4 teaspoon ground cinnamon

Steps:

  • Mix raisins and brandy in small bowl, let stand 20 minutes.

  • Pour over sweet potatoes.
  • Bake in preheated oven at 350 degrees for 40 minutes, basting with pan juices occasionally.

Tips:

  • Choose the right sweet potatoes: Look for firm, unblemished sweet potatoes that are about the same size. This will ensure that they cook evenly.
  • Wash the sweet potatoes thoroughly: Scrub the sweet potatoes with a vegetable brush to remove any dirt or debris.
  • Pierce the sweet potatoes with a fork: This will help them cook more evenly and prevent them from bursting.
  • Bake the sweet potatoes at a high temperature: This will help them caramelize and develop a slightly crispy exterior.
  • Add the raisins and cinnamon towards the end of cooking: This will prevent the raisins from burning and the cinnamon from becoming bitter.
  • Serve the sweet potatoes warm: They are best enjoyed fresh out of the oven.

Conclusion:

Sweet potatoes with raisins and cinnamon are a delicious and nutritious side dish that can be enjoyed by people of all ages. They are a good source of fiber, vitamins, and minerals, and they are also low in calories and fat.
