1 cup flour
2 teaspoons baking powder

1 ¼ cups milk
2 eggs
3 tablespoons melted butter
1 tablespoon brown sugar
1 teaspoon lime juice
½ teaspoon vanilla extract
½ teaspoon grated lime zest

Steps:

  • Pierce a sweet potato with a fork and place in a microwave-safe bowl; heat in microwave until tender, 5 to 10 minutes. Cool and measure out 3/4 cup sweet potato, reserving the rest for another use.

1 medium sweet potato, baked until tender, skin removed, and mashed (about 3/4 cup)
1 cup rolled oats
1 cup unsweetened almond, coconut, or cashew milk
2 eggs or egg replacer equivalent
3 tablespoons unsweetened almond butter
1 tablespoon flax meal
2 teaspoons baking powder
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
Zest of 1 medium clementine
Pinch of ground cardamom

2 1/4 lbs sweet potatoes, peeled and chopped
1 cup half-and-half
3/4 cup packed brown sugar
1 teaspoon salt
2 teaspoons vanilla
2 eggs
1 1/2 cups miniature marshmallows
1/4 teaspoon salt
1/2 cup flour
1/4 cup packed brown sugar
2 tablespoons chilled butter, cut into small pieces
1/2 cup pecans, chopped

Steps:

  • Preheat oven to 375°F.
  • Place potatoes in boiling water and simmer for 20 min, or until tender; drain and cool slightly.
  • Place potatoes in a large bowl; add half and half, 3/4 cup brown sugar, 1 tsp salt and vanilla and beat at medium speed until smooth (or mash with potato masher to desired consistancy).
  • Add eggs and mix well; scrape into a 13 x 9 dish coated with cooking spray.
  • For topping: sprinkle marshmallows over top.
  • Combine flour, 1/4 cup brown sugar, and 1/4 tsp salt in medium bowl.

  • 1. Combine all dry ingredients. In another bowl whisk the egg, milk, sweet potatoes, oil and vanilla. Stir into dry ingredients just until combined.
  • 2. Bake in preheated waffle iron until golden brown.
  • 3. For Nut Topping: in a small skillet melt 1 tbs. butter over medium heat add 1/2 cup chopped pecans, 1/2 cup chopped walnuts { i use all pecans} cook and stir for 2 minutes. Add 2 tbs brown sugar, 1 tbs water, 1/8 tsp ground cinnamon,dash of salt and dash of nutmeg. Cook and stir until sugar is dissolved. Serve waffles with topping and your favorite syrup.
