This is a great recipe to dress up your sweet potatoes.

3 sweet potatoes
2 bananas
½ cup white sugar
¾ cup packed brown sugar
½ cup chopped pecans
¼ cup evaporated milk
1 teaspoon butter
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup shredded coconut
1 ½ cups miniature marshmallows

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Grease one 8x12 inch baking dish.
  • Bring a pot of salted water to a boil. Add potatoes; cook until tender but still firm. Drain, and transfer to a large bowl to cool.
  • In a mixing bowl, combine sweet potatoes, bananas, white sugar, brown sugar, pecans, evaporated milk, butter, vanilla, cinnamon and nutmeg. Mix well.
  • Pour mixture into baking dish, place coconut on top of potato mixture and top with marshmallows. Bake for 10 to 15 minutes.

I was given a recipe as an alternative to the traditional 'sweet' sweet potato dishes. I was very dubious at first, but I went ahead, made it with fresh sweet potatoes (not canned, as they are not available in Canada), made my own adjustments and gave it a go. The finished product looked, smelled and tasted FANTASTIC! Not mushy, and the flavors mingle beautifully! People are pleasantly surprised when they taste it. Enjoy!

1 (29 ounce) can pears, drained and chopped
1 (29 ounce) can sliced peaches, drained
1 (15 ounce) can pineapple chunks, drained
2 cups peeled cubed sweet potato
⅓ cup butter
¼ cup brown sugar
1 tablespoon curry powder, or to taste

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Grease a 9x13-inch baking pan.
  • Place drained pears, peaches, pineapple, and cubed sweet potatoes in a large bowl.
  • Melt butter in a saucepan over low heat. Whisk in brown sugar and curry powder until well blended. Pour over the sweet potato mixture and toss to coat. Spread mixture into the prepared pan.

I have had this recipe for a long time . My brother-in-law likes to make this often when we visit..he gave this recipe to me so I make it myself now..this is a meal in itself. He bakes his potatoes n the oven--I like to use the microwave....so much faster....I hope you like Carlo's recipe.

4 medium sweet potatoes
2 tsp bacon drippings
1/4 c finely chopped shallots
2 tsp minced garlic
1/2 tsp cumin
1/2 tsp ground cinnamon
12 oz lean ground beef
1/4 c dry sherry or apple juice
3/4 c crushed canned tomatoes
1/4 c chopped raisins
1/4 c green olives with pimento, sliced
1/4 tsp kosher salt
1 tsp capers
2 Tbsp chopped fresh cilantro
garnish cilantro leaves

Steps:

  • 1. Pierce potatoes on side with a sharp knife and place on a paper plate and cook in your microwave for about 5 to 10 minutes until tender- checking on them at 5 minutes by squeezing them with a oven mitt for doneness. Or bake in 425^ oven for 50 minutes.
  • 2. In a large skillet over medium heat,heat oil. Cook onion for 4 minutes, until soft. Add garlic,cumin and cinnamon;cook another minute.
  • 3. Add and scramble ground beef and cook until no longer pink , about 5 minutes. Add sherry or juice; cook 2 minutes.
  • 4. Add tomatoes, raisins, olives, capers and salt; reduce heat and simmer,5 minutes;stir in chopped cilantro. Cut open potatoes and mash insides with a fork; divide beef mixture evenly among the potatoes and add a bit of shredded cheese ,if desired and accent with some cilantro leaves . Enjoy!
