2/3 cup packed brown sugar

1 teaspoon orange zest

2 cups sweetened shredded coconut
1/2 cup granulated sugar

1 large per sweet potato ball marshmallows

4 medium russet potatoes, peeled
1 tablespoon salt
2 ounces oaxaca cheese, cubed (or any other soft white cheese)
1 cup seasoned bread crumbs

  • Preheat oven to 375 degrees F.
  • Put potatoes in a large pot and fill with water until potatoes are just covered.
  • Add the 1 tablespoon salt. Bring to a boil and cook until potatoes are very soft, about 20 minutes.

100g rich tea biscuit
50g white Malteser
50g mini marshmallow
50g dried cranberries
50g cake crumbs (we used shop-bought Madeira cake)
3 tbsp golden syrup
100g desiccated coconut
edible glitter (optional)

Steps:

  • Melt the chocolate in a bowl over a pan of simmering water. Meanwhile, crush the biscuits and Maltesers in a large bowl with a rolling pin.

1/2 tsp cinnamon
1 Tbsp butter
2 c cooked, mashed sweet potatoes
1 c shredded coconut
10 marshmallows

  • 1. Blend sugar, cinnamon and butter with mashed sweet potatoes until smooth and well mixed.
  • 2. To form balls: Firmly coat each marshmallow with potato mixture until well covered. Then roll each potato ball in coconut.
