3 to 4 cups organic canola oil (or enough for about 3 inches in a wok, deep-fryer or wide saucepan)

  • 1. Preheat oven to 450 degrees F. Thinly slice sweet potatoes (with skin on). Lay slices on 2 parchment covered baking sheets. Using a pastry brush, generously brush slices w/ olive oil.
