Tips:

  • Choosing the Right Sweet Potatoes: For a creamy and flavorful pone, select sweet potatoes that are firm and free of blemishes. The best varieties for baking are Garnet, Beauregard, and Covington.
  • Preheating the Oven: Before starting, preheat your oven to the specified temperature. This ensures even cooking and prevents the pone from becoming soggy.
  • Preparing the Sweet Potatoes: Wash and peel the sweet potatoes, then grate them using a box grater or food processor fitted with the grating blade. Alternatively, you can boil or steam the potatoes until tender and then mash them.
  • Mixing the Batter: Combine the grated sweet potatoes, flour, sugar, baking powder, baking soda, salt, and spices in a large bowl. Whisk the eggs, milk, and melted butter in a separate bowl, then add to the dry ingredients and mix until just combined. Avoid overmixing, as this can result in a tough pone.
  • Baking the Pone: Pour the batter into a greased 9x13 inch baking dish and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. The pone should be golden brown on top.
  • Making the Eggnog Whipped Cream: In a medium bowl, whip the heavy cream until soft peaks form. Gradually add the confectioners' sugar and eggnog, and continue whipping until stiff peaks form. Refrigerate until ready to serve.
  • Serving the Pone: Cut the pone into squares and serve warm or at room temperature. Top with a dollop of eggnog whipped cream and a sprinkle of cinnamon or nutmeg.

Conclusion:

This Sweet Potato Pone with Eggnog Whipped Cream is a delightful combination of classic Southern flavors. The moist and flavorful pone, made with grated sweet potatoes and warm spices, pairs perfectly with the rich and creamy eggnog whipped cream. Whether you're serving it as a breakfast dish, a side dish, or a dessert, this pone is sure to impress your family and friends. Try it out and experience the deliciousness for yourself!
