4 tablespoons unsalted butter
2 tablespoons maple syrup
3/4 teaspoon packed, finely grated orange zest (from about half of a large orange)
1/2 teaspoon kosher salt, plus more as needed
1/4 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 425°F. Coat a 9-inch pie or baking dish with butter and set aside.
  • In a small mixing bowl, add pecans, cranberries, and brown sugar. Toss to combine and set aside.

1 ⅓ cups white sugar
¾ cup milk
3 eggs, beaten

¾ cup all-purpose flour
½ cup margarine, melted

4 large sweet potatoes
2 c fresh cranberries
1/2 c packed brown sugar
2 Tbsp butter, melted
1/2 c fresh orange juice
TOPPING:
1/2 c chopped walnuts
1/4 c packed brown sugar
1/2 tsp cinnamon
3 Tbsp cold butter

Steps:

  • 1. Boil potatoes with water to cover, until tender, about 50 minutes. Drain and cool. Peel and cut into 1/4 inch slices. Place 1/2 of the potato slices in a greased 2 1/2 quart baking dish. Top with 1/2 of the cranberries, brown sugar, and butter. Repeat layers. Pour orange juice over the top.
  • 2. Cover and bake 30 minutes at 350. In small bowl combine nuts, brown sugar and cinnamon; cut cold butter in with pastry blender. Sprinkle over sweet potato mixture, and bake, uncovered for 10 minutes, or until topping is golden brown.
