Categories     Side Dish

Time 50m

Yield 6

Number Of Ingredients 8

1 (8 ounce) package broad egg noodles
2 tablespoons butter
3 eggs, separated
1 cup white sugar
1 ½ teaspoons ground cinnamon
2 apples - peeled, cored and chopped
¼ cup raisins
½ cup chopped almonds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in the egg noodles, and return to a boil. Cook uncovered, stirring occasionally, until the noodles have cooked through, but are still firm to the bite, about 5 minutes. Drain well. Place cooked noodles into a mixing bowl.
  • With an electric mixer, beat egg whites in a bowl until they form stiff peaks; set egg whites aside. Whisk the egg yolks together in a bowl until smooth, and mix in the sugar until well combined. Pour egg yolk mixture over the noodles, and mix in the cinnamon, apples, raisins, and almonds. Gently fold in the beaten egg whites, trying to keep as much volume as possible. Pour the kugel into the prepared baking dish.
  • Bake in the preheated oven until the kugel is browned and the center is set, about 30 minutes.

Sweet Noodle Kugel image

This is the style of kugel we'd get in a New York City area Jewish deli, and that my relatives would make for holidays. There seems to be endless variations of this noodle pudding now, but for me this is the authentic original version. Refrigerate leftovers.

SWEET NOODLE PUDDING/KUGEL (NUT TOPPING)

Sweet Noodle Pudding/Kugel (Nut Topping) image

I like the way this sounds but haven't tried it yet. It's from Marcia Saltzman in Pingry Cooks. It has chopped nuts in the topping which is a bit different from the usual. If making for company, make sure there are no peanut allergies! You need to have this in the refrigerator all day or or night before baking so plan accordingly.

Tips and Conclusion

Tips:

  • For a creamier pudding, use full-fat coconut milk.
  • If you don't have a food processor, you can grate the sweet potatoes by hand.
  • Be sure to squeeze out as much excess moisture from the sweet potatoes as possible before adding them to the pudding mixture. This will help prevent the pudding from being too watery.
  • If you want a more caramelized top, broil the pudding for a few minutes before serving.
  • Serve the pudding warm or cold, topped with your favorite toppings, such as whipped cream, fruit, or nuts.

Conclusion:

Sweet potato noodle pudding kugel is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's also a great way to use up leftover sweet potatoes.
