This is an original recipe, inspired by the Jalapeno Sweet Potato Soup at Homestead Heritage in Waco, Texas.

2 sweet potatoes
1 whole jalapeno pepper
¼ cup softened butter
¼ cup orange juice
1 tablespoon chopped fresh cilantro
sea salt and cracked black pepper to taste
2 tablespoons melted butter
¼ cup walnut pieces

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Bake the sweet potatoes in the preheated oven until tender, 45 minutes to 1 hour. Once tender, peel, and place into a mixing bowl. While the potatoes are baking, place the jalapeno pepper in the oven, and bake until the skin loosens, about 20 minutes. Peel, mince, and place into the bowl with the potatoes. Add the softened butter, orange juice, and cilantro; mix with an electric mixer until smooth and creamy. Season to taste with salt and pepper, then transfer to a 1 quart baking dish. Drizzle with the melted butter and sprinkle with the walnut pieces.
  • Bake in the preheated oven until hot in the center, about 20 minutes.

5 lbs sweet potatoes
1/4 cup butter
3 large fresh jalapenos, finely chopped (if you want it less spicy, use less seeds)
8 ounces shredded monterey jack cheese, divided
1 teaspoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Bake potatoes at 400ºF on oven rack 1 hour or until soft.
  • Cool, remove skins.
  • Place potatoes in a large bowl; add butter.
  • Beat potatoes at medium speed with an electric beater until mashed.
  • Stir in jalapenos, 1 cup cheese, salt and pepper.
  • Spoon mixture into a lightly greased 9 X 13" or 3 quart shallow baking dish; srinklle remaining 1 cup cheese over top.
  • Bake at 400ºF for 30 minutes or until the edges are bubbly and the cheese is melted.
  • Heat broiler.
  • Broil casserole 3 minutes or until cheese is golden and crispy.

500g sweet potatoes
125g butter, plus extra for the dish
125g light brown soft sugar
150ml whole milk
3 eggs
grating of nutmeg
½ tsp ground cinnamon
1 tsp vanilla bean paste
35g butter
75g plain flour
75g light brown soft sugar
50g pecans, chopped

Steps:

  • Fill a large pan with boiling water from the kettle and set over a medium-high heat. Carefully drop in the whole, unpeeled sweet potatoes and cook for 30 minutes until very tender when pierced with the tip of a sharp knife. Drain well and leave to cool for 10 mins, then peel.
  • Heat the oven to 180C/160C fan/gas 4. Tip the peeled sweet potatoes into a large bowl, add the butter and mash with a potato masher until completely smooth. Tip in the brown sugar, milk, eggs, spices and vanilla and whisk until everything is combined and smooth.
  • Lightly butter a 20 x 30cm baking dish, then scrape in the sweet potato mixture. To make the topping, rub the butter into the flour, then stir in the brown sugar, pecans and a good pinch of salt. Sprinkle the topping evenly over the sweet potato filling, then bake for 45-50 mins until golden on top.

1/2 cup unsalted butter (1 stick), at room temperature, plus more for greasing the pan
6 large sweet potatoes (about 4 pounds), scrubbed
2 large eggs, at room temperature
1 (14-ounce) can sweetened condensed milk
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 teaspoon kosher salt
1 cup finely chopped pecans
1 cup lightly crushed cornflakes (optional)
1/2 packed cup light or dark brown sugar
1/2 cup all-purpose flour
1/4 cup unsalted butter (1/2 stick), melted
2 cups mini marshmallows, plus more to taste

Steps:
