Savory sweet potato patties made with green onions, fresh cilantro and garlic.

Provided by Lyuba Brooke

Categories     Appetizer     Side Dish

Number Of Ingredients 9

1.5 lbs sweet potatoes
1/3 cup diced green onions
1 egg
1/2 cup plain bread crumbs
1 Tbsp minced fresh cilantro
2 Tbsp sour cream
1 large clove of garlic
salt and fresh cracked pepper to taste
Vegetable oil for cooking

Steps:

  • To bake sweet potatoes: wash them well, poke a couple of holes with a knife, wrap in foil and bake at 350 until soft. Bake time will depend on how large are your sweet potatoes. If you get smaller ones, you can significantly decrease cooking time. Once done, cool until easy to handle and scoop out all the potato meat into the mixing bowl.
  • To boil sweet potatoes: wash, peel and cut them in half or in four pieces, depending on the size. Add cut sweet potato pieces to salted boiling water and cook until butter knife easily goes through. Drain and add them to the mixing bowl.
  • Mash sweet potatoes in a mixing bowl until smooth.
  • Add green onions, cilantro, sour cream, egg, bread crumbs, grated garlic and mix well.
  • Add salt and pepper, mix well and taste to make sure you have enough.
  • Preheat a medium saute pan over medium heat. Add some vegetable oil.
  • Form sweet potato patties and cook for about 5-7 minutes on each side. Use a small spatula and flip carefully.

HAM AND EGG POTATO SALAD WITH CHARRED SCALLIONS

Ham and Egg Potato Salad with Charred Scallions image

Provided by Molly Yeh

Categories     side-dish

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 16

1 tablespoon neutral oil, plus 2 teaspoons for drizzling
One 8-ounce/226-gram ham steak, diced
1 bunch scallions (80 grams; about 6), cut crosswise into 1-inch pieces
2 1/2 pounds (1132 grams) Yukon gold potatoes, peeled and cut into about 1-inch chunks
1 1/2 teaspoons kosher salt, plus more for seasoning
1/3 cup (50 grams) coarsely chopped cornichons, plus 3 tablespoons brine
1 cup (208 grams) mayonnaise
1/4 cup (60 grams) plain whole-milk Greek yogurt
2 tablespoons (30 grams) whole-grain mustard
2 teaspoons sugar
1/2 teaspoon garlic powder
Freshly ground black pepper
3 hard-boiled eggs, coarsely chopped
2 ribs (80 grams) celery, chopped
1/4 cup (7 grams) chopped fresh Italian parsley, plus more for garnish
2 tablespoons (3 grams) chopped fresh dill, plus more for garnish

Steps:

  • Heat a large cast-iron pan over medium-high heat. Add a drizzle of oil to coat the bottom of the pan. Add the ham and scallions. Cook until the scallions are charred and the ham is lightly browned, 1 to 2 minutes per side. Remove the pan from the heat and set aside to cool completely.
  • Put the potatoes in a large pot with heavily-salted cold water to cover by about an inch (add as much salt as you would to pasta water). Bring to a boil over medium-high heat and cook until tender, 8 to 10 minutes. Drain in a colander and return the potatoes to the still-hot pot, tossing them to cook out any residual moisture. Drizzle with 1 tablespoon of the brine and 1 teaspoon salt to season the potatoes while still hot so they absorb the flavor. Toss very well. Let cool slightly, about 5 minutes.
  • Meanwhile, in a large mixing bowl, stir together the mayonnaise, Greek yogurt, mustard, sugar, garlic powder, remaining 2 tablespoons brine, remaining 1/2 teaspoon salt and several grinds of pepper until smooth. Fold in the potatoes, cooled scallions and ham, eggs, cornichon, celery, parsley and dill. Toss to completely coat the potatoes with the dressing. Sprinkle with additional parsley and dill to garnish. Serve at room temperature or cover and chill until cold, at least 2 hours. This can be made a day ahead. Taste before serving, as you may need to add more salt once it's chilled.

Poached Eggs with Herb-Roasted Turkey Breast and Sweet Potato Hash image

Provided by Ellie Krieger

Categories     main-dish

Time 1h5m

Yield 4 servings

Number Of Ingredients 11

2 teaspoons olive oil
1 medium onion, diced (about 1 cup)
1 teaspoon chopped fresh thyme leaves
2 sweet potatoes, baked for 40 minutes at 400 degrees F, cooled, peeled and diced (about 3 cups)
1 1/2 cups cooked diced Herb-Roasted Turkey Breast (4 ounces)
1/4 teaspoon salt
Freshly ground black pepper
1/4 cup low-sodium chicken broth
1 teaspoon white vinegar
4 eggs
Hot sauce, for serving

Steps:

  • In a large nonstick frying pan, heat the oil over moderately high heat. Add the onion and thyme and cook, stirring, until softened and beginning to brown, 3 to 5 minutes. Add the sweet potatoes, turkey, salt and some pepper and cook, stirring occasionally, until the potatoes are beginning to brown, about 3 minutes longer. Add the broth, scraping up any brown bits that may have formed on bottom of pan. Keep warm while poaching the eggs.
  • Fill a saute pan with 1 1/2 inches of water and the vinegar and bring to a simmer. Break 1 egg into a small bowl and then carefully pour it into the water. Repeat with the remaining eggs spacing them so they do not touch. Poach at a gentle simmer until the whites are firm but the yolks are still runny, 3 to 4 minutes. With a slotted spoon, transfer the eggs to paper towels and season with salt and pepper.
  • Divide the hash between 4 plates and top each serving with a poached egg. Serve with hot sauce.
