I don't eat regular potatoes and sweet potatoes are really nutritious. I went searching the web for some variations with them and loved this. It's really simple too.

2 -4 sweet potatoes or 2 -4 yams
1 -2 tablespoon olive oil
1 -2 tablespoon garlic granules (to taste)
1/4 cup parmesan cheese (to taste)
2 pinches sea salt (to taste)

Steps:

  • Preheat oven to 450
  • Cut up sweet potatoes into wedges,rounds or thin strips.
  • In a large bowl add the fries. Coat them with oil. You may substitute just water if desired. Then add the garlic granules,parmesan and sea salt.
  • Spay a cookie sheet with pam or oil and lay fries out on top.
  • Bake for 10 mins then turn them over. Put back in the oven for 10 more minutes. If you have thicker fries you may need an additional 5-10 minutes baking time.

5 tablespoons olive oil
6 cloves garlic, finely chopped
2 teaspoons finely chopped fresh thyme leaves
1/4 teaspoon red chili flakes
2 tablespoons finely chopped fresh flat-leaf parsley

Steps:

  • Place the potatoes in a large pot of cold water, add 2 tablespoons of salt and cook until potatoes are tender, but still firm, about 15 minutes. Drain and let cool slightly.
  • Heat the grill to high.
  • While the potatoes are cooling, heat 2 tablespoons of the oil in a small saute pan on the grates of the grill. Add the garlic, thyme and chili flakes and cook until the garlic is just soft, about 45 seconds. Remove from the heat.
  • Slice each potato in half lengthwise then slice each half into 3 or 4 wedges, depending on the size. Brush the wedges with the remaining 3 tablespoons of oil and season with salt. 4 sweet potatoes (peeled and cut into thin fires)
1 teaspoon ground cumin
1 teaspoon dried oregano

6 ounces plain yogurt
1 tablespoon mayonnaise

  • Potatoes -- Two important things to note when making these. First. Cut all the fries approximately the same size. Second, make sure to cook directly on the cookie sheet. Add to the cookie sheet and make sure then are not laying on top of one another. They need some space so they can brown up.
  • Bake -- In a 425 degree oven bake them for 15 minutes and then flip. Guys, they will be soft, they aren't done but be careful flipping them. Bake another 20 minutes until crispy.
  • Dip -- As the fries bake, make the dip. Just mix it all in a small bowl and refrigerate. Nothing more. Grating the onion is important as it gives you a lot more flavor. Just enjoy, these are a great change from the average french fries.

Canola oil or vegetable oil

1/4 cup (1/2 stick) unsalted butter, at room temperature
