GARLIC AND HERB GRILLED SWEET POTATO FRIES
Steps:
- Place the potatoes in a large pot of cold water, add 2 tablespoons of salt and cook until potatoes are tender, but still firm, about 15 minutes. Drain and let cool slightly.
- Heat the grill to high.
- While the potatoes are cooling, heat 2 tablespoons of the oil in a small saute pan on the grates of the grill. Add the garlic, thyme and chili flakes and cook until the garlic is just soft, about 45 seconds. Remove from the heat.
- Slice each potato in half lengthwise then slice each half into 3 or 4 wedges, depending on the size. Brush the wedges with the remaining 3 tablespoons of oil and season with salt. Grill until lightly golden brown and just cooked through, about 6 minutes. Remove to a platter and immediately toss with the garlic mixture and chopped parsley.
BAKED SWEET POTATO FRIES WITH GARLIC, LIME & HONEY DIP
These are just good. Not spicy but very savory baked fries. I love them because there is no frying but still crunchy. The dip is a nice sweet and savory flavor which really makes these unique.

Steps:
- Potatoes -- Two important things to note when making these. First. Cut all the fries approximately the same size. Second, make sure to cook directly on the cookie sheet. No foil or parchment paper. After cutting the sweet potatoes fries add to a medium size bowl with the olive oil and seasoning and toss well to combine. Add to the cookie sheet and make sure then are not laying on top of one another. They need some space so they can brown up.
- Bake -- In a 425 degree oven bake them for 15 minutes and then flip. Guys, they will be soft, they aren't done but be careful flipping them. Bake another 20 minutes until crispy.
- Dip -- As the fries bake, make the dip. Just mix it all in a small bowl and refrigerate. Nothing more. Grating the onion is important as it gives you a lot more flavor. Just enjoy, these are a great change from the average french fries.

Steps:
- For the caramelized onions: Heat the oil over medium heat in a large nonstick skillet. Add the onions, vinegar, salt and pepper, stirring occasionally, until the onions are deep golden brown, about 20 minutes.
- Fries: Drain the potatoes and dry completely on a clean kitchen towel. In a large heavy-bottomed saucepan, pour enough oil to fill the pan about a third of the way. Heat over medium-high heat until a deep-frying thermometer inserted in the oil reaches 375 degrees F. (If you don't have a thermometer a cube of bread will brown in about 5 minutes.)
- While the oil is heating, in a large bowl, whisk together the flour, baking powder, baking soda, salt and 2 1/2 cups water until smooth. Coat the potatoes in the batter. Transfer 8 to 10 potatoes to the oil, allowing any excess batter to drip back into the bowl. Fry until golden and crisp, 5 to 6 minutes. Drain on paper towels. Repeat with the remaining potatoes.
- For the sauce: In a small skillet, melt the butter over low heat. Add the thyme and garlic and cook for 2 minutes. Pour the sauce over the fries and gently toss until coated.
- Place the fries on a platter and spoon the onions on top. Sprinkle with fontina and serve immediately.

SWEET POTATO FRIES WITH BASIL SALT AND GARLIC MAYONNAISE
Steps:
- Preheat the oven to 400 degrees F. Place the sweet potato "fries" on a foil-lined baking sheet and toss with the olive oil. Bake until golden, about 45 minutes. Meanwhile combine the basil, salt, and pepper in a small bowl. In another small bowl combine the mayonnaise, garlic, and lemon juice, and stir to combine. When the sweet potato fries come out of the oven, sprinkle with the basil salt. Serve with the garlic mayonnaise alongside for dipping.
Tips:
- Choose the Right Sweet Potatoes: Select firm and smooth sweet potatoes without blemishes or bruises. For evenly sized fries, choose potatoes of similar thickness.
- Proper Cutting Technique: Cut the sweet potatoes into uniform strips or wedges. Cutting them too thick or thin will affect the cooking time and crispiness.
- Garlic Infused Oil: To enhance the flavor of the fries, infuse the cooking oil with garlic cloves. This adds a subtle garlicky aroma and taste to the fries.
- Seasoning and Herbs: Don't limit yourself to just salt and pepper. Experiment with different seasonings like paprika, chili powder, or dried herbs like rosemary or thyme for added flavor.
- Crispy Texture: To achieve crispy fries, ensure the oil is hot enough before adding the sweet potato strips. Avoid overcrowding the pan as this can cause steaming instead of frying.
- Monitor Cooking Time: Keep an eye on the fries during cooking. Overcrowded fries or excessive cooking can result in soggy or burnt fries.
- Serve Fresh: Enjoy the sweet potato garlic fries while they're hot and crispy. They are best served immediately after cooking.
Conclusion:
These sweet potato garlic fries are a delicious and healthy alternative to traditional potato fries. With their naturally sweet flavor enhanced by garlic-infused oil and seasonings, they offer a unique and flavorful snack or side dish. Whether you prefer them crispy or tender, these fries can be customized to your liking by adjusting the cooking time and seasonings. So, gather your ingredients, preheat your oven or air fryer, and get ready to enjoy this delightful and nutritious snack!
