SWEET POTATO FRIES

These addictive seasoned "fries" from Mark Bittman are actually baked, but we promise you won't miss the grease. The spice mix - garlic powder, paprika, salt and black pepper - can be used on regular potatoes as well (you'll just need to increase the baking time a bit).

Tips

  • For the best results, use sweet potatoes that are about the same size so that they cook evenly.
  • To make the fries extra crispy, soak them in cold water for 30 minutes before cooking. This will help to remove excess starch and prevent them from sticking together.
  • Be sure to dry the fries thoroughly before cooking them. This will help them to crisp up and prevent them from steaming.
  • Cook the fries in a single layer so that they cook evenly. If you overcrowd the pan, the fries will not cook properly and will be soggy.
  • Flip the fries halfway through cooking so that they brown evenly on all sides.
  • Season the fries with salt and pepper to taste. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
  • Serve the fries hot with your favorite dipping sauce, such as ketchup, barbecue sauce, or ranch dressing.
