SWEET POTATO CRUNCH CASSEROLE
There are many wonderful sweet potato casseroles on this site. After searching every way I knew how, I could find recipes with coconut, recipes with pineapple, and recipes with the pecan topping, but not a single one with all three. So here is the recipe my Mom has made for Holiday meals as long as I can remember. It is so sweet, my Dad sometimes saves it for dessert! This is NOT a light version! If you wish, use the drained pineapple juice and add a couple of Tablespoons of heavy cream or milk instead of 1/2 cup milk.

SWEET POTATO CASSEROLE CRUNCH GOODIE
This is a deliciously sweet and tasty dish. My grandmother used to make it and we love it. It's so good you'll want it for your vegetable and your dessert. You can microwave or boil your potatoes for a faster recipe, but I prefer baking the very dark yam.

Tips:
- Use fresh sweet potatoes: Fresh sweet potatoes have a better flavor and texture than store-bought mashed sweet potatoes.
- Cook the sweet potatoes until they are very tender: This will ensure that they are easy to mash and will create a smooth and creamy casserole.
- Use a good quality brown sugar: Dark brown sugar has a more intense flavor than light brown sugar, which will give your casserole a richer taste.
- Don't overmix the casserole: Overmixing will make the casserole tough. Just mix until the ingredients are well combined.
- Bake the casserole until the top is golden brown and the center is set: This will ensure that the casserole is cooked through.
