AWESOME SWEET POTATO CASSEROLE

Awesome Sweet Potato Casserole image

This recipe was given to me in the late 1980s by Diane Thornton in Jackson Mississippi. I have made it each year since, and when I bring it to gatherings people rave about it, so I bring it year after year. Some people say it's more like a desert than a side dish. All I know is that it's a standby for me and always gets a nod.

Tips:

  • Choose the right sweet potatoes: Use firm, medium-sized sweet potatoes for even cooking.
  • Cook the sweet potatoes thoroughly: Prick the potatoes with a fork and microwave for 4-5 minutes per side, or until tender. You can also roast them in the oven at 400°F for about an hour.
  • Use fresh pineapple: Fresh pineapple adds a bright, tropical flavor to the casserole. If you don't have fresh pineapple, you can use canned pineapple, but be sure to drain it well.

  • Don't overcook the casserole: The casserole should be cooked until the sweet potatoes are tender and the sauce is bubbly, but don't overcook it, or the sweet potatoes will become mushy.
