1-1/2 cups canola oil
4 large eggs
1 tablespoon grated orange zest
2-1/2 cups all-purpose flour
2 teaspoons baking soda
1-3/4 teaspoons pumpkin pie spice
3/4 teaspoon salt
3 cups shredded peeled sweet potatoes (about 9 ounces)
FROSTING:
1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
3-1/2 cups confectioners' sugar
1-1/2 teaspoons grated orange or lemon zest
1-1/2 teaspoons lemon juice
1/8 teaspoon orange or lemon extract
Orange peel strips

Steps:

  • Preheat oven to 325°. Line bottoms of 2 greased 9-in. round baking pans with parchment; grease paper., In a large bowl, beat sugar, oil, eggs and orange zest until well blended. In another bowl, whisk flour, baking soda, pie spice and salt; gradually beat into sugar mixture. Stir in sweet potatoes., Transfer to prepared pans. Bake 45-50 minutes or until a toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to wire racks; remove paper. 2 teaspoons pumpkin pie spice
1 cup mashed cooked sweet potato
1 cup milk
1/3 cup vegetable oil
3 eggs
1 package (8 oz) cream cheese, softened
1/2 cup butter, softened
2 1/2 cups powdered sugar
1 teaspoon orange extract
Reserved grated orange peel

Steps:

  • Heat oven to 350°F. Spray bottom only of 15x10x1-inch pan with cooking spray.
  • Grate peel from orange to get about 1 1/2 tablespoons; set aside for Icing. Squeeze orange to get 1/3 to 1/2 cup juice. Place juice in large bowl.

1 cup butter, softened
1 cup sugar
1 cup firmly packed light brown sugar
3 large eggs
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda

1 cup buttermilk
2 cups mashed sweet potatoes
3/4 cup chopped pecans, toasted
1/2 cup sweetened flaked coconut
1 teaspoon vanilla extract
1 navel orange, cut into quarters
1.5 (8 ounce) packages cream cheese, softened
3/4 cup butter, softened
6 cups powdered sugar

2 lbs tan skinned sweet potatoes
2 cups cake flour
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon ground cloves
1 cup vegetable oil
1 cup sugar
1 cup brown sugar, packed
4 large eggs
2/3 cup chopped walnuts
2/3 cup dried cranberries
1 (8 ounce) package cream cheese
1/2 cup unsalted butter
3 1/4 cups powdered sugar, sifted
2 tablespoons frozen orange juice concentrate, thawed
1/2 teaspoon vanilla extract
1/4 cup dried cranberries
1/4 cup chopped walnuts

Steps:

  • Preheat oven to 400 degrees F.
  • Prick potatoes and roast until soft, about 1 hour.
