  • Lightly spray 9X9X2" baking pan.
  • Bake for 16-18 minutes, until a toothpick inserted in the center comes out clean.
  • Allow to cool to room temperature (30 Minutes).

  • Cover and refrigerate until needed.
  • Remove brownies from pan, cut into 16 squares, and wrap in plastic wrap.
  • Refrigerate overnight.
  • Frost brownies and serve.

Tips:

  • Use ripe sweet potatoes: Look for sweet potatoes with smooth, unblemished skin and a deep orange color. Ripe sweet potatoes will be soft to the touch and have a slightly sweet smell.
  • Roast the sweet potatoes: Roasting the sweet potatoes concentrates their flavor and makes them easier to blend into the brownie batter. You can roast the sweet potatoes whole or in cubes. If you're roasting them whole, pierce the skin with a fork before baking to prevent them from exploding.
  • Use a food processor or blender to blend the sweet potatoes: This will help to create a smooth and creamy brownie batter. If you don't have a food processor or blender, you can mash the sweet potatoes by hand, but this will take a little more time and effort.
  • Don't overmix the brownie batter: Overmixing the batter will make the brownies tough. Mix the batter just until the ingredients are combined.
  • Bake the brownies in a preheated oven: This will help to ensure that the brownies bake evenly.
  • Let the brownies cool completely before cutting them: This will help to prevent them from falling apart.
