3 pounds sweet potatoes, peeled and thinly sliced
1 ½ cups shredded Gruyere cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking dish with cooking spray.

1/4 cup crushed gingersnap cookies
2 cups heavy cream
1/4 cup pure maple syrup
2 teaspoons fresh thyme
1/4 teaspoon ground allspice
Kosher salt
Pinch of cayenne pepper
3 pounds sweet potatoes (6 to 8 medium), peeled and sliced 1/4 inch thick

Steps:

  • Preheat the oven to 375 degrees F. Melt the butter in a small skillet over medium heat. Add the breadcrumbs and gingersnap crumbs and cook, stirring, until lightly toasted, 3 to 5 minutes; set aside.

1/3 cup grated Parmesan
2 cups heavy cream (or half-and-half)
3 tablespoons fresh sage, chopped
1 tablespoon fresh rosemary, finely chopped
3 fat cloves garlic, grated or minced
1/4 teaspoon freshly grated nutmeg
1 1/2 teaspoons kosher salt, plus more as needed
3 large eggs, lightly beaten
3 pounds sweet potatoes (about 4 large or 5 medium), peeled
Freshly ground black pepper, to taste
1 2/3 cups/6 1/2 ounces grated Gruyère
