Time 40m

Yield 12 muffins

Number Of Ingredients 10

2 cups sweet potatoes, peeled and diced
2 apples, peeled and sliced
2 cups whole wheat flour
2 eggs, slightly beaten
1/4 cup skim milk
1/2 cup granulated unbleached cane sugar
1 teaspoon pure vanilla extract
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 325 degrees celsius.
  • Steam sweet potatoes until soft. Mash until consistent.
  • Meanwhile, cook apples in a saucepan and just enough water to cover the bottom of the saucepan, until the water has all but evaporated. Mash or process the apples.
  • In a large bowl, combine the mashed sweet potatoes with the baking soda, baking powder, and flour. If the dough is too dry, add a bit of milk.
  • In a separate bowl, whisk together the eggs, sugar, apples, and vanilla, until consistent.
  • Gradually add the egg mixture to the the sweet potato mixture, and whisk together.
  • Pour batter into greased muffin tray, and bake for 20-25 minutes, until a toothpick inserted comes out clean.
  • Enjoy!

Tips:

  • Choose sweet potatoes with vibrant orange flesh for a richer flavor and color in your muffins.
  • Use a food processor or blender to achieve a smooth and even consistency for the sweet potato puree.
  • Feel free to substitute all-purpose flour with whole wheat flour or a gluten-free flour blend for a healthier twist.
  • Use ripe apples for a naturally sweet and juicy flavor in your muffins.
  • For a crunchy topping, sprinkle some chopped walnuts, pecans, or oats on top of the muffins before baking.
  • If you prefer a sweeter muffin, add an extra 1/4 cup of brown sugar to the batter.
  • For a moist and tender texture, avoid overmixing the batter. Mix just until the ingredients are well combined.
  • To ensure even cooking, fill each muffin cup evenly with batter, about 2/3 full.
  • Keep an eye on the muffins while they bake. If the edges start to brown too quickly, reduce the oven temperature by 25 degrees Fahrenheit.
  • Allow the muffins to cool slightly in the pan before transferring them to a wire rack to cool completely.
