1 lb pizza dough, I used whole wheat
1/2 cup tomato sauce
1 sweet potato, cooked and dice
1/2 cup mushrooms
1 clove garlic
1-2 cups kale
1/4 cup roasted red peppers
1/4 cup kalamata olives
1/2 tsp italian seasoning
1/4 tsp basil
1/2 tsp oregano
1/4 tsp paprika
1/4 tsp garlic powder
1/3 cup nutritional yeast
1/3 cup mozzarella cheese

Steps:

  • Preheat oven to 425.
  • Using a floured rolling pin, roll the dough from the center to the edges until the circle is about ½ inch thick or to your likeness. Transfer to a greased or oiled pizza or baking sheet.
  • Microwave your sweet potato for 7 minutes. While it is microwaving, sautee the mushrooms in olive oil and garlic. Slowly add in kale and peppers and turn heat to low.

2 medium sweet potatoes (about 8 oz. each), peeled, cut into 1/2" pieces
3/4 cup vegetable broth
1 1/4 cups full- or reduced-fat coconut milk
1 Tbsp. curry powder
1 bunch curly kale (about 8 oz.), stems removed, leaves torn into bite-size pieces
1 (15.5-oz.) can chickpeas, drained, rinsed
2 Tbsp. fresh lime juice
Kosher salt, freshly ground pepper
2 cups cooked white or brown rice

Steps:
